Broccoli Cheddar Soup Dinner on The Night Before Christmas | Country Christmas Eve

Broccoli Cheddar Soup
Ingredients:
1 stick butter
1 small onion diced
6 cups fresh broccoli
4 cups chicken broth
½ teaspoon each thyme and onion or garlic powder
salt & pepper to taste
2 tablespoons flour
1 cup heavy cream
1 cup sharp cheddar cheese shredded

Instructions:
In a large saucepan, cook butter, onion and broccoli over medium heat until onion softens (about 3 minutes). Add chicken broth, and seasonings. Simmer until broccoli is softened, about 8 minutes.
Place flour in a small bowl. Add in cream a little at a time stirring until smooth, then add to soup. Continue whisking until thick and bubbly, about 3-4 minutes.
Remove from heat, stir in cheeses and serve immediately. Top with more cheese, bacon pieces would also be yummy! 😁

We’re just going to make it on the stove top real quick is broccoli cheddar soup I got tea going back there here lots of Christmas Eve excitement happening some onions we’ll cook the broccoli and onions and butter for about 5 minutes good thing about this is it

Doesn’t take long to cook it on the stove top anyway So it’s just the broccoli everyone remain calm it’ll it’ll be fine they’re having flashbacks so that time I back SE sealed broccoli we’ll cover it there for just about 4 to 5 minutes and I’ll be getting the other stuff we need chicken broth salt pepper a little bit of flour

And he did it he made it well I wanted it to match the beams and all I made these beams to look like you beat them out with a ax you know to make it kind of have a rustic feel turn light on so

You can see all right so I I burnt the floor I went in here and I put some uh you know some character to the floor and I left some lighter spots like this right here so it looks like it was you know walked on and in War I didn’t

Overdo it but I just made it feel more brok in now we still got some trim to do do a lot more painting but this is you know and then we got to get new blinds and we still got a little bit of painting to do around the windows over

Here we left that two tone we wanted we wanted it that way so we did the brown on the outside and the Sandy Clay on the inside still and see it matches the the brown is Gondola and the light is Sandy clay it matches it all pulls in here

With the stairs see that’s where we’re hiding our paint can didn’t see the wall I put a 26 wall in right here mm and I trimmed it out all old timy with one before is natural it didn’t do anything as far as any type of uh any kind of uh

45s or anything on this I didn’t now these Beams I 45 those the one that goes across the middle I was going to 45 all of them but I ended up not 45 in these because it’s a long story the way these was some was on a different degree I

Mean I got them joined perfectly up there but some was on like 14 one was 3 and 1/2 up here and 3 and 3/4 down there it was going to be a really really really tricky thing to do without a really good table saw and I didn’t have

One so I didn’t 45 those up here I did mhm because that was it was possible to get that dead right uh like that but anyway they all turned out really really rustic looking looks just like you beat them out with a act please leave a light on for Christmas

    Ingredients ( Servings: 36 pieces )
    2 chicken breasts boneless skinless, finely shredded
    ¾ cup mayonnaise
    2 green onions thinly sliced
    2 tablespoons dried minced onion
    1 teaspoon garlic salt
    3 tablespoons light brown sugar packed
    ½ cup thinly sliced red seedless grapes
    ⅓ cup sliced almonds
    Salt and pepper to taste
    4 burrito sized tortillas
    How To Make Mexican Chicken Pinwheels
    Mix together the mayonnaise and chicken in a large bowl.
    Add in green onions, minced onion, garlic salt, brown sugar, grapes, and almonds to the mixture. Stir up to combine. Taste and add salt and pepper if desired.
    Layout a burrito tortilla on your work surface. Add a quarter of the chicken salad mixture and spread it out. Leave a 1/2 inch border around the end of the tortilla so it doesn’t overflow. Roll the tortilla up tightly into a log and repeat with the remaining chicken salad and tortilla shells.
    Wrap the logs in plastic wrap tightly and fold the ends of the wrap under the logs. Put them in the fridge for 4 hours, or overnight if possible.
    Remove the plastic from the pinwheels and cut them into 1/2 inch slices. Serve and enjoy.
    Cooking Notes
    Use soft and pliable tortillas so they roll easily and won’t crack.
    Don’t overstuff your pinwheels or they’ll be tough to cut and difficult to handle.
    Ensure that you wrap them tightly so they’re easier to slice.
    We find that using a serrated knife to cut these works best!
    Feel free to use different flavors of tortillas, just make sure they’re burrito size.
    Experiment and add in other ingredients like apple bits, raisins or chopped onions, etc for different flavors – these are very adaptable.
    The refrigeration step is imperative. It’s great that you can mix the salad and then make the pinwheels, since you have to let them set in the refrigerator anyway, you can skip the step of chilling the chicken salad on its own.
