Today on grow with Dr jonette we are going to can Italian style stewed t What I Call Italian style to stewed tomatoes basically they’re fresh Garden tomatoes that we’ve peeled cut up added a bunch of delicious fresh herbs to them this is going to be more herbs than we need but

A jar in the winter time and be transported back to the summer the warmth the sunshine and all the wonderful things of Summer you may also be hearing some bird sounds I opened up the door to my kitchen I have a bird feeder right outside my kitchen so I

Opened up the door to the back area where the bird feeder is and for whatever reason there must have been a bunch of finches that hatched out because right now I have got a bunch of finches that are going crazy out there enjoying the food that we put in the

Bird feeder for them so let’s get canning I peeled a bunch of other Tomatoes I actually didn’t peel all of them because I’m going to be making some into sauce later as well but I peeled a bunch of them and I went and I picked some fresh herbs from the garden we’ve got

Oregano we’ve got basil and we’ve got Italian parsley I like Italian parsley better than the curled parsley I think it has better flavor nutrition wise they’re both the same they’re both a what I call a super brain food for your brain they’re delicious and they’re great for helping keep your brain

Healthy they have antioxidants as well as some vitamins and minerals all of which help keep your brain healthy and help your thinking processes stay sharp and clear and we’re going to cut these herbs up there’s a couple of ways that you can cut them up you can use a food chopper which is

What you see here or just if you don’t have a food chopper you can just use a knife and chop them up with a knife I like to use the food chopper for a couple of reasons one is it’s safer two is you can actually cut the

Herbs a little bit finer using the food chopper and three it’s quicker so I’m going to go ahead and chop cut these chop these herb yeah chop these herbs up using our food chopper see how quickly that H they get chopped so we got the oregano Now The

Parsley little bit noisy but that’s okay when you chop po those herbs up just that smell of you know it releases all of those natural chemicals that give them the delicious smell the natural Oils and it smells like you’re sitting in the middle of your herb garden just enjoying all the wonderful smells probably need to chop that in a couple of B es and a little bit more here oh the basil is Heavenly if you love the smell of Basil just chopping this much basil

Like this is so delicious I like to usually add about two parts of Basil to one part of the oregano and one part of the parsley so equal amounts of parsley and oregano and double the amount of the basil for this big pan that I have here I’m putting in

It looks like probably a probably a/4 of a cup of chopped oregano a/4 of a cup of chopped parsley and almost probably it looks like a half a cup to maybe even 3/4 of a cup of the B it’s kind of hard to estimate a lot of

Times it’s just up to you I don’t I you know some people like more herbs some people like less that’s kind of what works for me but uh you know there isn’t an exact amount here a lot of times you may have noticed a lot of cooks sometimes there isn’t an exact amount

It’s a lot of some of it has to do with just your personal preference so I’m going to we’re going to chop up the tomatoes here in this pan and again I like to to use my food chopper uh you can take and in fact I’m going to move these I’m going

To just we’re going to I mixed all the herbs together and you can just just chop them up into Pieces and I’ll usually just kind of move some aside there like that and put them right back back in the pan because I use that pan to mix up all of the chopped tomatoes with the herbs before I put them into the jars so we’ll go ahead and

I’ll go ahead and I’m going to show you the the food chopper as Well one here there’s some a fair amount of herbs in it but that’s okay it chops them up a little bit finer than the other so if you like them a little coarser you can chop them a bit less like that well that’s pretty coarse like that that chops them up a bit Coarser and I’m going to go ahead and we’ll chop these up and then I’ll add the herbs and show you the next step in the process if you like this information and found it useful so far thank you for clicking the like button as well as signing up for notifications so that you

Right you can always use a spoon to stir it up for something else you’ll see there’s a lot of juice in there I tend to not put all that juice in my canning jars and we’ll talk a little bit about what else you could do with that juice

It’s delicious tomato juice you could actually just drink it strain out the seeds and the bits of tomato and drink it it’s delicious we’re ready for the next step here on these Italian style herb Tomatoes stewed tomatoes is what I call them they’re ready to go into the canning

Jars but before we put them into the canning jars let’s talk a little bit about canning jars the most common one that I use and like the best is a pork canning jar you can buy them on Amazon or there’s a number of places you can

Buy them and they come in two different mouth widths they come in a narrow and a wide mouth you can see here the difference if you’re using the narrow mouth you probably probably you’re going to and even if you aren’t the wide mouth you’re going to want to use a canning

Funnel it helps with cut down on some of the messiness that happens when you’re filling the jars in addition to that you want your jars to be clean I put them through the dishwasher on the sanitize cycle to make sure they’re nice and clean and you want I also wait till

They’re dry if there’s a little moisture in them a little water in them not a big deal and the other thing that you’re going to need is brand new I recommend buying new you can buy them in bulk the lids that go on the jar they come in a

In a u the narrow jar lids and then they come in a wider size for The Wider Mouth Jars as well you can buy them online in bulk which is what I do I’ll buy like 150 of them at a time because every time you

Can a new fruit or vegetable in the the jar you want to use a new lid the reason for that is that the lids may not reeal if you try may not seal as well if you try to reuse them so get a new lid you

Can if you don’t can a lot buy just 12 of them at a time you can buy either the wide or the narrow mouth the other thing you want to do is make sure you check your jars if they’re brand new you don’t have to worry as much but I use my jars

Over and over I have some jars in my pantry that were given to me that probably were from the thir 1930s 1940s they’re antique jars so take your finger run them around the rim and just make sure there’s no chips or any cracks or anything you want a nice smooth surface

So that you get a good seal the jars once they’re clean they’re ready to use and the lids if they’re brand they’re brand new they’re ready to use when I was a kid growing up we always heated up the lids of the jars but you don’t have to do that anymore

The rubber on it is a better quality Rubber and it will seal without being preheated it used to preheat it number one to sterilize the lids cuz a lot of times we reuse the lids back then and number two to soften up that rubber to

Get a good seal on the lid but I use them straight out of the box have no problems getting them to seal so let’s go ahead and start filling our jars here I’ve got my canning funnel and I’ve also got a slotted spoon so that cuz I

Like lots of tomato in the jar and not quite as much of the juice and you’ll notice there’s a lot of juice in the pan here that I will we’ll talk about what we can do with it I believe that it’s important to not waste anything there’s a you know I’m

Going to go through all the work of growing and watering and harvesting and you know planting and growing and watering and weeding and harvesting and mulching all that goes into having an organic garden I want to make sure that I don’t waste any of anything that I grow in that Garden this

Is about the right amount filled about the right amount I’m going to just put a lid on it I reuse the Rings you don’t need to buy new rings every year you can reuse them put them right on the jar and just hand tighten you want to leave some airspace

In the top of the jar here and I’m going to show you there’s definitely some airspace there and the lid goes right on it the other thing you may want to do which is what I quite often do is I add some canning salt or some it’s usually

Sea salt it’s a coarse sea salt a canning salt about a teaspoon of it to the top of the jar before I put the lid on it if youve this is a great way to have a no salt or low salt vegetable if you’re on a no salt or low salt diet you

Can can them yourself they’re good for you especially when You’ growing them organically they’re good for you they’re good for your body and uh they you can make them low salt or no salt depending upon what your dietary needs are the lid goes right on them and they’re going to

Go into a caner let me set my caner up here and talk about a little bit about the caner for these types of for tomatoes tomatoes are a high high acid product a high acid product is safe to be water bathed to water bath you put

The jar in the caner fill the caner with water so it’s about an inch over the top of the jar bring the water to a boil boil for 20 minutes and you’re done however if you add a lot of other vegetables to the tomatoes it lowers the

Acidity and makes them a low acid type of vegetable if you add a lot of onions and celery maybe garlic what else would you like to add some peppers all of those are low acid and will decrease the acidity level and not not and make it so it isn’t safe for you

To water bath so if you love all those other vegetables and have lots and I do I can them with the other vegetables but instead of water bath canning I pressure can them and this is actually a pressure caner and the lid goes on and it gets

Sealed and you raise the pre you I have a blue it’s called the ball Blue Book of canning and preserving this is what it looks like and it has it’s my go-to book for times and recipes for how not necessarily the recipes for what to prepare it’s my go-to book for for times

Uh for pressure canning it gives you altitude because your altitude of where you’re at is dependent your kind your pressure canning time is dependent upon the altitude the main thing is is you want to have yourself you want to get yourself a good resource like that book

There’s plenty of books out there but that’s one of the ones I use and recommend get yourself a good resource so that you what you can is safe what you don’t want to have is an unsafe product an unsafe low acidity vegetable that you’ve Cann why because they

Anything grown in the soil can have botulism spores in it and it’s that high pressure that will kill the botulism spores acidity will kill them as well so when you’ve got a high acid type of uh vegetable you’re fine also all of your fruits are fine for water bath canning

Your jams are fine your fruits are fine and your acidic vegetables like tomatoes are fine otherwise A good rule of thumb is all pretty much all of your other vegetables your beans your corn your onions Peppers um celery also needs to be pressure canned get a good resource and

You know make make sure you’re educated because botulism can kill and it it can be scary but it doesn’t have to be you can still can your own food enjoy your own food it’s not a problem as long as you follow the guidelines in a good

Resource I’m going to take that lid off and we are going to I’m going to go ahead and fill the rest of the jars and finish up this canning Process I like to take a glass and fill it with ice and add some tomato juice to it now if you like Bloody Mary’s could makes great my friends I don’t drink but my friends tell me this is one of the best tomato juices they’ve ever had in a

Bloody Mar so that’s a possibility and it’s it’s just healthy for you it’s low loaded with so many good things for your brain it’s loaded and for your immune system so especially in the winter time you could act you could also can this you could just put this juice in another

One of those canning jars and can it along with the rest of your tomatoes next winter you’ve got this freshly you’ve got this uh fresh tomato juice that you’ve canned and you can use it in Bloody Mar as a glass of tomato juice for breakfast or anything that is

That you would normally use tomato juice in I personally like to drink it fresh I usually don’t ever it doesn’t usually ever make it to the canning jar because I put it in a picture put it in the fridge and I just enjoy it for the next

Several days as there isn’t usually a lot of it but it’s loaded with vitamin C it’s good for your immune system it’s good for your brain it has antioxidants and vitamins and minerals that are healthy for you so here’s to canning here’s to Homegrown organic tomato Juice delicious let’s go ahead and get this in our caner remember we’re going to water bath it I’m going to put seven of these in the caner I’ll cover them with water about an inch want about an inch of water on the top of them And we’re going to set that aside cuz we need to put a lid on it and let’s take that over I’m going to fill it with water and then I’ll show you how much that looks like so we have the jars in the caner and it’s ready to go on the stove it

Goes on the stove I could put a lid on it but I don’t it’s easier to monitor it and see when it starts to boil once it starts to to boil I set a timer for 20 minutes the timer goes off and my tomatoes are canned I take them out let
