So I am very new to pasta. But I’m a jump-in kinda girl. I made the pasta dough:
8oz bread flour
6 large egg yolks
1 egg
1 1/2 tsp olive oil
1 tbl milk
Mixed in KitchenAid, wrapped in cling wrap and rested for 15 minutes (the dough not me…yet).
Did some research, asked a question on here.
Kneaded dough till I needed a nap (that’s what they mean by “rest.” Kneading pasta dough is way more difficult than bread), wrapped back up. An hour or so later I rolled it thru my kitchen aid.
Filling:
browned hamburger, threw in powdered onion, garlic, basil, rosemary, oregano, pepper & salt.
Added mozzarella, Parmesan, a touch of cheddar. Just what I had, didn’t want to go to store for other meat.
Made a mess filling the ravioli using water to seal (thanks for the help Reddit), heated up the sauce (a jar, forgive me), boiled water, salted, turned down heat, cooked raviolis in batches (NONE EXPLODED!!!), drained for a second on a towel, laid them in the sauce.
The boys loved them, I loved them, I love pasta!!!!
