

I’m new to Reddit and I don’t know how to post images on comments on a thread so here is my “What you’ve been eating this week Wednesday”.
I cooked some lentil soup on Sunday and I have been eating it daily. Unfortunately I don’t use recepies when I cook as I like improvising but here’s approximately what I put: 400g red lentils, 2 packages of unsalted crushed tomatoes, circa 300g carrots, several cloves of garlic, two onions + as spices cumin, garlic powder, onion powder, ginger, ketchup, thai curry paste.
I have also been eating a lot of salads, mainly based on kale, mandarin oranges, celery, red cabbage, cooked mushrooms, fresh onion, chickpeas nigella seeds and black sesame seeds. As condiments I have put some vinegar, miso + plant-based milk to balance the acidity of the vinegar.
For breakfast I have been eating oatmeal & frozen berries or berry smoothie (berries, banana, hemp and flax seeds, plant milk, mango, wheat germs, turmeric, black pepper, a tiny bit of kelp seaweed for iodine) + vitamins.
As snacks, I have been eating banana and oatmeal bake (mush bananas and oatmeals and bake in the over or microwave as you like). I’ve been also snacking some baby carrots, mandarin oranges, apples and eating a few wallnuts together with the meals. Yesterday as an evening snack I steamed some broccoli and ate with with vinegar, nutritional yeast and miso.
What I’m planning to eat still this week? Let’s see. Probably a lot of oatmeal, berries, banana+oats bake, kale, red cabbage and fruit. I have also some cut radishes and kohlrabi in my fridge. I will still cook later this week some other warm dish once my lentil soup is finished, but I have not yet decided what that will be. Maybe some beans. Potatoes would be also great. I would also like to buy some beetroot and test boiling them (usually I have roasted them in the oven).
