Blueberry Avocado Smoothie Bowl

INGREDIENTS:
1 cup frozen blueberries
1 cup full fat coconut milk
½ avocado
Juice of ½ lime
½ teaspoon pure monk fruit extract powder, or use pitted dates to sweeten
½ teaspoon vanilla powder

Toppings:
Frozen blueberries
Coconut flakes
Shredded coconut
Sprouted or toasted pumpkin seeds
Bee pollen

INSTRUCTIONS:
In a food processor or high-powered blender place the frozen blueberries, coconut milk, avocado, monk fruit powder and vanilla powder. Process until smooth. Divide into two bowls. Top with desired toppings and serve.

NOTE: This recipe results in a creamy, yogurt-like texture. If you want a thicker smoothie bowl replace some of the coconut milk with more frozen blueberries and avocado, or frozen banana.

1 cup frozen blueberries Smoothie Bowl 1 cup full fat coconut milk Juice of 1/2 lime 1/2 avocado 1/2 teaspoon monk fruit extract powder or a few pitted dates, for sweetness 1/2 teaspoon pure vanilla powder Add the lime juice. Blend until smooth. This results in a yogurt-like texture.

To make thicker use less milk, more frozen blueberries and avocado or frozen banana. Top with your favorite toppings. Frozen blueberries, shredded coconut, pumpkin seeds… Enjoy!
