Here’s a simple recipe for making Turkish Open mouth Pide:

Ingredients:

For Dough:

1 Tablespoon active dry yeast
1 teaspoon sugar
1 cup lukewarm water
3 cups or 500 grams all-purpose flour
1 teaspoon salt
2 tablespoons olive oil
100 ml yogurt
100 ml luke warm milk

For the Filling:

400 gram ground beef
1 onion, finely chopped
1 tomatoes, diced
1 teaspoon garlic, minced
1 teaspoon ginger
1 teaspoon paprika
1 chopped green chilli
Half lemon juice
Salt and pepper to taste
Handful of coriander
Olive oil for cooking

Instructions:

In a large mixing bowl, combine the flour and everything.

Mix the ingredients until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.

Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it doubles in size.

Preheat your oven to 220°C (425°F).

Punch down the risen dough and divide it into two equal portions. Roll each portion into an oval or elongated shape on a floured surface.

Transfer the rolled dough onto a baking sheet lined with parchment paper.

Add the beef mixture on rolled dough leave the edges.

Fold the edges of the dough to create a border, giving it the characteristic boat shape of Turkish Pide.

Beat an egg and brush it over the edges of the pide for a golden finish.

Bake in the preheated oven for 15-20 minutes or until the crust is golden brown.

Once done, remove from the oven, slice, and enjoy your delicious Turkish Pide!
