Sorry the picture isn’t great. I started eating before I found this sub! This was so freaking delicious. Caramelizing the onions gave the dish the dash of sweetness I was going for but you could just brown the onions in the butter without sweetener. This dish is creamy, buttery, salty, sweet and spicy! 🤤 What more could you ask for?

Ingredients:

Polska Keilbasa, sliced lengthwise (I used about 1/4 of a package weighing 14oz. Math is hard.)
Thin sliced sweet onion
Sliced brie (with or without rind) enough to cover the Kielbasa
1 Tablespoon unsalted butter
1 Teaspoon sweetener (I used the monk fruit stuff)
Mustard on the side (I used Guildens spicy brown)

Melt the butter in a skillet until sizzling. Add the Kielbasa and place the onion around it so everything is getting equal share of the heat. Sprinkle the sweetener on the onions, give a little toss then brown everything to your desired brownness. Push the Kielbasa together, set the onions on top, cover with slices of Brie. Put a lid on the pan, remove from heat and let the cheese steam-melt.
