– Tea towel worth of mixed green chillies. Should be heavy on habaneros and other similar fruity variants. I add several ghosts for a bit of extra spice. Omit to reduce the heat.
– Several green tomatoes (should be tomatillas)
– One white onion
– Half a large bulb of garlic
– 1 tsp cumin
– 1 tsp coriander
– 1/2 tsp black pepper
– Sprinkle of dry oregano
– Salt to taste
– 1 cup of boiling water
– 3/4 cup of white vinegar
– 1/2 cup of sugar
– 1 tbs tapioca flour (mixed with a little water)

1. Saute the aromatics on low with the spices.
2. Add chillies and saute on medium heat till colour brightens (few minutes).
3. Add tomatoes and briefly saute.
4. Add sugar and water and bring to boil.
5. Add vinegar.
6. Blend to desired coarseness.
7. Season to taste.
8. Add flour slurry and bring to boil.
9. Jar and store in fridge.
