This video was filmed before Christmas. A couple of days later, we left for our Christmas vacation in Gatlinburg and Dollywood. When we returned, I came down with the flu and as I was getting over the flu, Pop got sick. So it’s a bit late, but it is so worth the wait. This taco was absolutely delicious. You can make the meat ahead of time if you have extra time one day, freeze it, and when you want a salad, thaw and reheat. Serve over chips with lettuce, tomatoes, onions, salsa, taco sauce, guacamole, sour cream, cheese, or your choice of condiments. Or simply, sprinkle over tortilla chips, add grated cheese, and heat in oven until cheese is melted. Yumm! I hope you will give this a try. And don’t forget, order your copy of my cookbook. Hey everybody it’s Karen with food and family are you ready for Christmas I have been trying to get ready and I’ve got very little of my shopping done so I’ve got to get on that but um I’ve been tooling around today doing and things so

Now I’ve got to get a little bit of supper started but we’re just going to have a quick little supper tonight and um this is something we like and I’m making taco salad the food and family way but I’ve Got My Pan here getting hot and I just put a little bit

Of olive oil in it I just want a little something to get it started now I have just right at one pound P of ground chuck now I’m going to put this ground chuck in this Skillet now let me get rid of this I’m going to throw this away

And I didn’t touch anything so I want to let this cook now as it Browns and I know you’ve all probably made tacos at home and I am taking a shortcut tonight and instead of making taco seasoning I’ve got a packet of taco seasoning I’ve making it easy on myself I’ve been busy

Today and this is is the time of year where we all have a lot of things to do right and I’ve been busy today with some things so I just kind of want to take it easy and get a shortcut but yet I won’t pop to have a good meal when he gets

Home so while that’s Browning I’m going to get ready get some of my toppings going that we like for our taco salad and that’s a little bit of onion I want a little bit of diced onion on my taco I like it it may not be traditional but you know if you don’t

Want it you can leave it off but I just happen to like it and I’m going to set these all in the little bowls so we can make our own s salad and you know that’s the one good thing about a taco bar you can do that last

Year I had the whole family over and you may have seen a little video that we did we did a little live video with my brother’s here and my children and grandchildren and uh we had a taco bar and uh everybody brought something that was taco or Mexican food related we had

Tacos with all the toppings we had uh taco soup and I can’t tell you what all we did have we just had so many different things and it was oh so good a niece of mine Amy if you’re watching I’m talking about you we have the love of

Tacos that’s the one thing she and I really do share and uh she loves them I love them so we kind of stuck our heads together and said hey that’s going to be our theme so that’s what we did and it was so fun if

You ever do that get together try to set a theme and it makes it fun I love to do that in fact I’m way past time having my brothers with me and us having a get together y’all met them every once and um if you haven’t if you’re new to

Tomatoes but you know what what we don’t use we can put in a salad because I’m going to d uh cut up some lettuce to go with this got to have lettuce it’s a salad right got to have some lettuce I’m just going to cut off a big old honk and

Um start cutting it I’m I’m not going to cut it in small pieces if you want it in small pieces you can now pot may come back behind me and chop his even smaller and that is absolutely fine so I’m going to put it right here and I think that’ll be enough for

Me and him so we have onion diced onion we have some diced tomatoes and we have some lettuce that I’ve cut up I’ve got tortilla chips and I’m going to put this back in my Zippy bag and put it back in my refrigerator and keep it crisp till I

Can get out my food saver and uh seal it up in there I’ve got some tortilla chips they say they’re thin and crispy I love the thin and Crispies I’ve got taco sauce you can use hot or mild whatever you want I have some salsa and sour cream if anybody wants it

Now the one thing I don’t have I don’t care for it pop doesn’t care for it either is guacamole if you want some guacamole to go on the side but I means make some it’s very simple to make all you need is an avocado a ripe avocado cut it up into

Chunks and um I would put some lime juice over it that acid would keep it from browning and chop you up some onions and some diced tomato in it mix it all up serve it on the side I’ve made it before and made it chunky and everybody just loved it so let’s check

Our hamburger meat yeah this meat this is a ground chuck but it has very little fat in it even after I added that small drizzle of oil I didn’t even put quite a tablespoon in there that is I’m happy about that cuz that means I don’t have to stand here and drain

It if it was real fatty I would certainly do that so I’m going to let that brown for a couple of more minutes and I think it’ll be good and after that gets good and brown I’m I’m going to add my taco seasoning I’ve got 3/4 of a cup

Of water and I’m going to add that to this hamburger meat you know the one thing that’s missing butter butter have you guys gone out and looked at my cookbook and I hope you will and I hope you’ll consider getting one uh I’m very proud this is my baby

Me just means the world to me okay you know I’m not seeing any pink left on this meat it is cooking up beautifully in this new pan that I have and I’m going to add this packet and it’s just a 1 oz packet that’s all I need

For this little bit of meat we’ll have meat left over popping I will so now I’m going to add my water and all it is as you know if you’ve made it before you just stir and let it simmer and that water will evaporate and all that goodness from

Those spices will get into that meat and flavor it oh so yummy and um I want a little bit of sauciness left now I don’t want to complet completely cook out this liquid cuz I like some of that sauciness to go on my salad okay so I’m going to let this

Simmer for just a few minutes it will not take long and then when it gets done I’m going to come back and I’m going to make a plate and I’m going to show you how I put my taco salad together all right we have this meat ready pops home we’re ready to eat

We’re having taco salad all right good all right so let’s put this together now I’ve cooked this down this meat and the sauce but I told you I want to leave it a little Saucy cuz I like to have a little bit of that sauce I don’t want it

Dry I don’t want it dry so that’s what makes it good I it does doesn’t it so I have these thin and crispy tortilla chips which is the ones we like the most we don’t like those thick heavy hard ones we like these little thin ones

So I’m just going to put us a few in our plate and y’all can make this any way you want it’s up to you and how you know the things you want in it your Basics your tortilla chips your meat look we going to sprinkle this meat oh over it

Oh we going to eat it by hand I’m going to have to go wash my hands no you’re going to eat it with a fork I’ve been putting new lights in our blow up Santa Claus he wasn’t very bright he wasn’t talking about me or the same you know Christmas supposed to be

Merry and bright right it in them from the stores or factories they’re not bright not bright are they let me go wash my hands go wash your hands I’m going to finish this so we’re going to sprinkle a little bit of lettuce now he probably likes some more lettuce than I do but

I’ll put what I think I want him to have and what I won’t how about that do y’all do that do y’all feed your husbands like you want them to eat okay now from here we’re going to I want to cut that lettuce up a little bit I’m

Going to sprinkle a few Tomatoes I just want a very few diced tomatoes on it I just thought some fresh tomato tomes would make it taste good don’t you think looks good and some how about some chopped onions finely diced onions we like onions we like onions oh yeah okay so

We’re going to get messy yes get us some and cheese got to have cheese I forgot to tell y’all that earlier you’ve got to have cheese I’ve got a taco blend cheese it’s montere G Jack and CBE and it says it has taco seasoning at it I don’t know but it

Looks like it does we’ll find out we’ll find out but look at there is that enough cheese for you mhm now I’ve got taco sauce and salsa would you like some of both or take a taco salsa you don’t want any salsa no I love salsa have you guys ever

Put salsa on your scrambled eggs or an omelette oh I love it he thinks I’m nuts me and his mom used to eat them that way she’s the one that got me eating it like that well the kids love them that way too yeah but I want some of that too

  7. I love a big taco salad for lunch or dinner. I don't care for raw onion but the rest sounds delicious! I like to put my cheese on the hot meat so it can melt a little.

  11. Thanks for another great video, Karen! This is going to sound SO strange, but the taco salad dressing that my family makes is a mixture of two ingredients, Miracle Whip and lemon juice, whisked together in a bowl until drizzle consistency. My mom got the recipe from a mexican restaurant in Enid, OK decades ago, and it's what she always made and it's what I still make today. The tang of the lemon juice and the sweetness of the miracle whip are so good. We drizzle that on top of our taco salads, drizzle taco sauce on top of that and mix it all up!
