Pen ala vodka I figured some of you might be done drinking your vodka after New Year’s at least for a while so why not cook with it from a quick research both Italy and America are mentions as the place of origin for this dish the English page mentions Italy strictly as

Country of origin but then the Italian page mentions both Italy and the US and knowing how Italians care about the culinary history there must be something about it when the US is mentioned anyways it seems like the dish became popular in New York in the80s and is

Still well worth a visit if you ask me the dishes for Italians and unusual combination of tomatoes and cream when combining these ingredients you always risk the acid in the tomatoes splitting your sauce adding vodka acts as an emulsifier which is great considering that the flavors of vodka also combine really well with

Tomatoes the main ingredients in this sauce are olive oil garlic onion ions tomato vodka and cream bacon and parmesan cheese is often added so I added some nice petta and Pano Rano for the tomatoes there are several ways to go some use canned tomatoes and others fresh it’s also common to use tomato

Puree because it gives the smoothest sauce personally I use tomato puree and then chop up some fresh cherry tomatoes for some added acidity and brightness I also like to add fennel together with the onions and on at the end because it just goes so well together with all of

The ingredients in this dish to top all of this off today I’m going to serve it with pansier chicken breast with crispy skin if you can’t get chicken breast with skin on you can buy a whole chicken and take the breasts off of that if you

Want me to show you how to break down a whole chicken let me know in the comments and I will make a video on that let’s get cooking start out by finely dicing your onions I use shallots because they just taste better then roughly chop your garlic and slice your

Fennel into larger pieces don’t worry they will collapse in the pan make sure to save the leaves on the fennel and add them to your tagon give both of these a medium chop cut your petta into a size that works for you and sauté it in a pan

With a small amount of olive oil when the bacon starts to get golden add your onions garlic and fenel and sauté until they turn soft and transparent now add a couple of tablespoons of tomato paste and make sure to give it a good amount of heat this ensures that you get rid of

The acidity and start developing the natural sugars once this is achieved add in the star of this dish your vodka burn off most of the alcohol just as you would with any other liquor also add in your fresh tomatoes now don’t forget the salt and also give it a little black

Pepper then add heavy cream I’ve added around a cup or 2 and 1/2 dcil heat and reduce for a while and then mix in some finely red parmesan now add your cooked Pena pasta to the pan and slowly combine it with the sauce it’s a good idea to

Learn how to TOS your pasta as it combines it with the sauce more even and much gentler you can practice with uncooked rice in a dry pan if you’re afraid of spilling your precious sauce everywhere now fry up your chicken breast like I said if you want to know

How to break down a chicken and learn how to fry the perfect chicken breast make sure to subscribe and I’ll get around to that once done cut it into thick slices serve your pasta with the finnel leaves and Teragon on top add a Sprinkle of parmeson and your golden delicious

Chicken breast on the side voila Pena alav vodka stay tuned for another video on a classic pasta dish next month and don’t forget to mention what pasta dish you would like to see featured next time in the comments I’ll also be back with other stuff next week thank you for

Spending your precious time with me take Care
