These Miso Glazed Brussels Sprouts are the BEST brussels I’ve ever had. The flavor is savory with a touch of heat and a touch of sweet. So easy to make that even beginners would be successful.

Miso Glazed Brussels Sprouts

1 pound fresh brussels sprouts
1.5 tablespoons neutral oil
1 teaspoon salt (or to taste)

2 tablespoons maple syrup
1.5 tablespoons miso paste
.5 teaspoon red pepper flakes (optional but well recommended)
Juice from a whole lemon

Preheat the oven to 400.

Thoroughly wash and dry brussels sprouts. Remove any ugly leaves and cut all but the smaller brussels sprouts in half, lengthwise.

Place brussels into a bowl and add neutral oil and 1 teaspoon salt. Mix well. Place onto a baking sheet with parchment paper. Separate brussels sprouts as much as possible. This allows them to brown more evenly.

Cook for 20-25 minutes until the brussels sprouts soften. Remove from heat and place back into the bowl. Mix together maple syrup, miso paste, lemon juice and red pepper flakes. Pour over brussels and mix well ensuring that each piece is coated with sauce.

Place back onto the baking sheet, spreading them out as much as possible. And they go back into the oven for another 8-10 minutes until they are sizzling and begin to darken in color. Cook for a bit longer if you’d like crispier brussels.

Remove from the oven. Serve with an additional squeeze of lemon on top and/or more pepper flakes.
