So I loooove risotto but wanted to try to make a WFPB version with brown rice instead of white, and something oil-free and generally lower in fat (lots of vegan risottos contain a lot of vegan cream/butter)
[I found this recipe online](https://plantbasedonabudget.com/creamy-brown-rice-risotto/#wprm-recipe-container-18522) where the secret ingredient is blended white beans. The starch from the beans helps make the brown rice taste starchy and dense like Arborio rice, and you can’t really taste the beans as it’s all hidden by nutritional yeast and other yummy flavors. I also amended the aforementioned recipe by adding a whole bulb of roasted garlic, roasted butternut, more nutritional yeast than written (just to taste!), only used about half of the bean blend, and omitted the oil.
