  1. You can mix the Chorizo in the eggs after the Chorizo is cooked. Don't have to put in the Tortillas separate. Pork has more flavor than beef Chorizo. We also add the potatoes with cheese inside. Eat with homemade salsa. 😋

  7. I like a nice sage breakfast sausage with sautéed onions and jalapeños and red bell pepper and eggs and shredded cheddar cheese and small diced velveeta cheeseI use an 8 inch flour tortilla. I don’t toast the tortilla because I actually prefer that soft steamed texture on these. I wrap them in aluminum foil to freeze and then warm them in the oven until they are warm and the cheese is melted. I make dozens of these at a time and they never last long.
