Quick and EASY are two of my favorite words when it comes to cooking in the summer. I want to be outdoors enjoying the weather as much as possible, instead of working hard in my kitchen. This salad combines a couple of summertime gems like fresh basil and tomatoes and takes them to another level. I literally made this meal in under 15 minutes. And with jarred pesto it comes together lickety-split! I reference my slow roasted tomatoes which I featured in a previous video. I make them ahead and they last in the fridge for a week…unless you gobble them all up! My homemade pesto sans nuts is also a make ahead. My husband is allergic to nuts so I make my own and store it in freezer bags to use through out the year. YUM! Throw some fresh different colored tomatoes in and it’s a feast for the eyes. I’ll be making this one over and over this summer…plus it makes great leftovers. WIN!
