Eggplant salad easy and tasty recipe.

Ingredients:
2 medium eggplant sliced into 1cm thick rounds
3 tbsp olive oil
Salt, pepper to taste

150g. baby tomatoes, sliced
20 kalamata olives
10g. parsley, chopped
2 tbsp olive oil
1 tbsp Balsamic vinegar
50g. Feta cheese
Salt, pepper to taste

Roast the eggplants in the middle of the oven at 220°C/428°F for 20 minutes.
