►Ingredients For the Lamb Curry

►Spices

2 tbsp coriander seeds
2 tsp cumin seeds
1 tsp fennel seeds
1 tsp black peppercorns
1 inch cassia bark
3 bay leaves
5 green cardamoms
1 black cardamom
1 small mace
4 cloves

2 tsp red chili
1 tsp turmeric
1 tsp garam masala
2 tsp salt

►Main Ingredients

1.7 kg or 3.7 lbs lamb shoulder
3 medium red onions
3 ripe vine tomatoes (remove the skin)
4 – 5 green bullet chilies
13 garlic cloves
1 inch ginger
Some finely chopped coriander

►Cooking Curry

8 tbsp sunflower oil
2 cups water
4 – 5 heaped tbsp ghee
Taste and adjust the salt
1 tsp coriander powder
1/2 tsp black pepper
2 – 3 cups water or more depending on how you like the sauce
Fresh coriander

►For the Rice

1 tsp saffron soaked in some warm water
Half inch cassia bark
2 crushed green cardamoms
3 cloves
Half star anise
1 tsp salt
4 cups chicken stock
1 green chili
Bring to simmer then Add
2 cups basmati rice (wash few times and drain)
3 tbsp salted butter

► For the Naan

1 small green chili
Handful fresh coriander
2 tbsp mint sauce
1/2 tsp salt (taste later and adjust)
Some water
1 cucumber
1 radish
4 tbsp natural yogurt
1 tbsp lemon juice (optional)

►For the Chips

1 tbsp salted butter
1 red chili
Some curry sauce
Cooked chips as required
Season with salt and tandoori masala
Fresh coriander

Lamp Curry that you guys going to try without further Ado let’s get started Chef present first of all we’re going to start with our spices with the coriander seeds using some the cumin seeds as well a good touch of that going in with the fenel seeds they were similar to cumin

Mix and now we’re going to throw in our washed rice now let the rice cook until they’re around 80% done and then we’re going to steam it off we’re going to let the rice absorb some of that stock and then we’re going to get rid of some just going to slightly cover

It so the rice are almost done but they still have a bite to it at this point time I’m just going to get rid of that stock NOW the rice go back in now throw your saffron all over the top cover with your lid make sure it’s

Nice and tight and now we’re going to let this steam up for around 13 to 15 minutes on low heat let’s check the rice now I’m just going to turn off the heat the r look amazing just going to flop these up throw some knobs of butter

Or you can add some ghee if you like our amazing boiled rice with saffron done again they will go amazing with our lamp Curry all right so the lamb has been cooking for around an hour and 15 minutes let’s check this it’s a little steamy here and I’m

Just going to check out the lamb to ensure it’s nice and tender let’s have a bite the lamb is tender you know it’s perectly cooked you don’t want to cook it too much so it’s falling apart so this is perfect now things are about to

Get hot in here throw in some of the ghee and S up the heater on medium high now now you want to fry this off until the oil separates from the mixture this should take you around 15 minutes or so so also at this point of time you can

Adjust any seasoning if you need to I’m going to throw in some of the salt a bit of this coriander powder and black pepper it’s hard to see what’s going on but it looks so so delicious you guys going to really enjoy this slam Curry

Now this isn’t AA or Kari so don’t add any yogurt all so now you can see the oil has separated from the mixture at this point of time I’m going to throw in some the water I’ve added around 3 cups of water you could add more if you like give that a

Mix now you want to bring this to simmer and then you can throw some fresh coriander it smells so so better than the takeaway you guys going to really enjoy this slam Curry like I said once you ready the coriander turn off the heat and leave it covered of a mouth
