Welcome back to the kitchen everybody it’s your boy the Mad chef and tonight on the channel we are going to be launching a brand new segment called Gourmet Burgers we take fresh ideas and fresh new approaches to some Pub Classics and even create some Original

Burgers I love Burgers I hope you do too tonight we’re taking the Mad Chef Twist on a classic called The Mushroom Swiss burger it’s really late um I’m working a little bit later and pulled some overtime tonight so pretty much all the prep has been done before we started

Recording but hopefully later on in future videos I can kind of show you what I did here um so what we got in this bowl here is some 8020 ground beef and we’re going to go ahead and ball that up into maybe a little slightly larger than golf ball siiz

Pieces all right so that roughly made 13 nice size Burger balls and to go with tonight’s entree we’re going to be making a family favorite of mine bacon cheese fries so we’re going to start before we start cooking the burgers we’re going to go ahead and render off

Our crispy bacon normally I go for eight slices but tonight I have nine in here because it would have just left one in the pack and we don’t waste bacon around here I hope you don’t either so since you guys know how I render off my bacon

And how I cut it we’re going to skip through that part of the video and get back to the burgers and now that we’ve got our bacon fried up into perfect little crispy bacon bits it’s time to focus on our burgers and I know you guys see a little something different here

Today I don’t know if you guys joined me for my Philly cheese steak video but I mentioned then that I had my eyes on a uh a stove top Plancha or flat top to convert this stove into a griddle and that’s what this is and I’ll leave a link in the

Description uh on the one that I use so you guys can get it too um it’s a two burer one and it’s going to work just fine for what we’re going to do today so before we start searing off our Burgers I have come up with a Montreal inspired

Seasoning for you guys to try at home I’ve tried it a couple times and it’s absolutely amazing all it is is two teaspoons kosher salt one tpoon ground black pepper 1 teaspoon onion powder 1 teaspoon garlic powder one teaspoon red chili flake and one teaspoon of cumin now in a traditional Montreal style

Seasoning you would use um coriander but you can substitute the exact same amount of coriander for cumin so if you don’t have a tablespoon I mean a teaspoon of cumin you can sub it with a teaspoon of coriander the only thing missing from this to make it an actual Montreal is

Some dill seed um you can if you can find some ground Dill that will work just fine I don’t have that and if I did have that it probably wouldn’t get used very often same with coriander the last bottle of coriander I had didn’t really

Get used so it got thrown away so guys if you don’t have coriander you can use cumin so now we’re going to go smash Style with these Burgers we’re just going to put a few on the drill and get them stearing all right I’m only going to put them on

Four at a time to prevent over cring plus I’m going to use this side of toaster buns so give that about 2 minutes two to three minutes all right and now that we’ve got our Burgers cooking we’re want to get started on our fries I’ve got my oil set to my usual

375 we cut our potatoes into home fries tonight so we’re just going to drop these guys in and we’re going to let those cook for about 7 minutes all right so what I’ve done here is just giving them a nice little pinch of our Montreal seasoning look at that

Sear all right and we’re going to do the very same thing for the next side all right want to flip them again let them cook for one more minute get rid of all that pink which is’s not much left all right and then we’re going to repeat

This process for all of our Burgers until we reach our last four Burgers we’re going to do something different when we get to our last four Burgers all right so what’s neat is whenever you cook the potatoes the same time you get the burgers going when those burgers are fully done with their

Cycle of cooking the potatoes are ready to come out when you’re working in the kitchen it is important to utilize your time time management is always a plus you’ve got to make sure these things work for you like they’re supposed to because if you’re off with your timing

It could be the difference between serving your dinner together as it supposed to for having to wait an extra 5 10 minutes on your side dish or for your entree to finish up so you really do want to manage your time wisely and so once you get these fries

Up it’s important it’s imp imperative to season them with salt as soon as they come up so when they come up salt them and give them a good toss you cannot avoid this step all right so I got to thinking and it’s already dangerous whenever I get to

Thinking the four burger patties may not be enough for what our next step is so went ahead and move the Plancha away and we’re going to cook our last five patties in here if you guys know a thing or two about cooking you may know what

I’m already trying to do but stay tuned this gets better and now that we’ve got all our Burgers off the heat I’ve got some cheese melting on those we’re going to go ahead and start with our bacon cheese fries and like always we’re going to go with my Approach of I don’t want

To see nothing and I like to have bacon in every bite so I start out with a thin layer of bacon bits then we want to come at it with some of this cheddar mild cheddar now I’m not sure if I have enough to do the whole thing but we’re going to find

Out so I brought out some backup cheese to be safe all right so you want to cover every inch of your home fries again you can call them steak fries you can call them whatever I call them good all right now that you’ve appropriately disguised your potatoes

We’re going to go hit it with the rest of that bacon that wasn’t the bacon y’all and we’re just going to decorate it like so all right go ahead and sprad out your little bacon bits and then we’re going to cover the rest of it with

Cheese and it looks like I was right I don’t quite have enough to cover the whole surface area of this so I want to bring out my backup which is this Fiesta blend cheese and then we want to cover the rest of the surface area with this

Beautiful fi to blend I’m trying to cover all that bacon can’t ever have too much cheese don’t tell your cardiologist that though all right we’re not quite done yet now I want to take some of this here parsley flakes and I’m going to just sprinkle this on

Top that way it adds a little bit of brightness a little bit of freshness and then we’re going to pop it in the oven on 350 for 15 minutes now that that’s done we can proceed with the final step of our mushroom swiss burgers all right so now what we’re

Going to do is we’re going to create a Savory mushroom gravy to go on top of our Burgers so that’s why I’m saving all of this burger fat down here all this flavor so what we’re going to do is we’re going to hit it up with [Applause] about four tablespoons of allpurpose

Flour all right and we’re just going to get that mixed in what this is going to do is that burger fat is going to make a rue with that flour instead of using something like butter for mac and cheese we’re using uh that burger that burger

Dripping all right now that we’ve got no clumps we’re going to hit this up with just a little bit of water we’re going to add it slowly I hope to God we don’t make a mess So what I did was I just added the rest of that bottle of water and I want to keep stirring this until it starts to thicken up and form a gravy like consistency all right guys and it’s been about 2 minutes and now we’ve got

Gravy so I’m just going to add in about half of our remaining Montreal inspired seasoning the reason why I’m doing half is because we’ve already got the flavor of that Montreal from off of those burgers so it’s gets it’ll get real easy to make it really salty so you don’t

Want salty so what I’ve got here is about 10 white mushrooms that I’ve rinsed and sliced real thin so we’re just going to add them in there and we’re just going to cook these until these mushrooms get soft then we’re going to check for salt and then we’re going to

Serve all right now it’s been cooking down for about 3 or 4 minutes now this gravy comes together real quick so what we’re going to do is we’re going to take a quick taste of this and see if it needs anything like salt that’s pretty good but I’m going to

Add the rest of this Montreal needs a little more flavor well guys it might be late but at least my family’s eating great would you look at that look how perfect these fries turned out that beautiful mushroom gravy double Patty and guys by adding in the rest of that Montreal inspired

Seasoning we have brought back all the missing flavor which wasn’t a lot but it brought back that extra life that the gravy needed everything kind of came together pretty quick so there’s only one thing left to do and that’s to try it we want to start first with these wonderful cheese fries no

Contest some of the best cheese fries you’ll ever eat no fake cheese and now this is the heavyweight moment want to get the crosssection here all I put on this was just the burgers on a Toasted Bun and this delicious um mushroom gravy we’re going to find out how it is this is

Outstanding the flavor combination of that mushroom gravy with the beef patties and the Swiss cheese is a 10 out of 10 it’s a knockout hit it holds up and this is literally this right here is literally the only thing you’re going to need on your sandwich you can put mayo

On the bottom bun if you want or ketchup or what have you this mushroom gravy completes it all you don’t need anything else is a flavor explosion I want to take me another bite but until next time this is your boy the Mad Chef guys I know it’s late but I
