First time using Boursin cheese. I have always made my own Alfredo/parm sauce in the past with heavy cream, Parmesan and seasoning which was pretty good but this Boursin was a whole new level of tasty. Super easy to throw together with the three main ingredients of spaghetti squash, prepared in oven like normal, Boursin, and large shrimp. Salt, pepper, garlic, parsley were already on hand in the cabinet. I flipped over the squash in the last 10 mins of baking at 400, split the Boursin to each of the halves and let that melt in. While that was finishing off the last 10 minutes, I sautéed some shrimp on the stove with butter and garlic. Mixed it all together for a filling dinner, I usually don’t finish eating the squash it’s always too much. I can see so many possibilities with adding different meat and veggies. I also love being able to toss the spaghetti squash in the oven for 40 mins or so and forget about it. It’s a good time for me to get a quick workout in.

Here’s a detailed recipe for Baked Spaghetti Squash with Garlic Shrimp and Boursin Cheese:

    **Ingredients:**
    – 1 spaghetti squash
    – Olive oil
    – Salt and pepper
    – Boursin cheese (i chose shallot and chive, split into two halves)
    – Large, peeled shrimp (frozen, with tails on)
    – Butter
    – Garlic (minced)

    **Instructions:**

    1. **Preheat Oven and Prepare Squash:**
    – Preheat your oven to 400F
    – Cut the spaghetti squash in half lengthwise and scoop out the seeds.
    – Brush the inside of each half with olive oil and season with salt and pepper.
    – Place the squash halves cut-side down on a baking sheet.

    2. **Bake the Squash:**
    – Bake in the preheated oven for 30 minutes.

    3. **Prepare the Cheese:**
    – While the squash is baking, take your block of Boursin cheese and split it in half.

    4. **Add Cheese to Squash:**
    – After 30 minutes, remove the squash from the oven. Flip the halves over and place half of the cheese in each portion of the squash.
    – Return to the oven and bake for an additional 10 minutes.

    5. **Prepare the Shrimp:**
    – While the squash is baking with the cheese, prepare the shrimp.
    – If using frozen shrimp, thaw them by running under water.
    – Heat a pan over medium-high heat and add butter and minced garlic.
    – Once the butter is melted and garlic is fragrant, add the shrimp.
    – Cook the shrimp for 5 to 7 minutes, turning halfway through. The shrimp is done when it’s pink, and the inside is white and opaque.
    – Remove the shrimp from the skillet once cooked.

    6. **Final Baking of Squash:**
    – After the additional 10 minutes of baking with the cheese, remove the spaghetti squash from the oven.

    7. **Cool and Combine:**
    – Allow the squash to cool until it can be handled.
    – Remove the tails from the shrimp and add them to the squash, distributing evenly between the two halves.
    – Use a fork to gently mix the squash strands, cheese, and shrimp together.

    8. **Serve and Enjoy:**
    – Serve the baked spaghetti squash with garlic shrimp while warm. Enjoy!

This dish combines the subtle sweetness of spaghetti squash with the savory flavors of garlic shrimp and cheese, creating a yummy and satisfying meal with just three main ingredients.
