Ingredients:
3 cups of Bulgur no 2*
2 chicken breasts
2 cups of chickpeas (soaked + cooked)
1 onion
6 cloves of garlic
1 cup of strained tomatoes
3 to 4 ripe (big) vine tomatoes
5 tablespoons of extra virgin olive oil
1 red pepper, 1 yellow or orange pepper
2 tablespoons of chicken seasoning
2 tablespoons of Turkish soup spices
1 small spoon of red pepper paste (optional)
salt to taste

* Bulgur comes in no 1, 2, and 3. Use no 2 here.

Method;
1. Chop.onions into small pieces and start sauteeing in olive oil. Once translucent, add chopped garlic and spices. Sautee for a minute.
2. Chopped chicken breast into small cubes and sautee for a couple of minutes.
3. Chop bell peppers and tomatoes into small square pieces. Add them to the pot and sautee for 2-3 minutes.
4. Add chickpeas, salt, and red pepper paste, then sautee for 2-3 minutes.7
5. Add bulgur and strained tomatoes, then mix well.
6. Add 4 cups of boiled water and put heat on medium-low. Let it cook for 8-10 minutes.
7. After 8 minutes, open the pot and make sure bulgur is not sticking to the bottom of the pot. If you feel it’s a bit dry, add some water.
8. Turn off the heat, move the pot to a different eye, open the pot, cover the pot with a tea towel and put pot lid back on top of towel.
9. Let it rest for 10 minutes.
10. After 10 minutes, open the pot and fluff with the fork. Adjust seasoning as necessary.
