Taco Tuesday

So we’re doing beer-battered fish tacos today and the thought is I’m going to use are the street taco size 30s and they are mini I think they’re super cute So today I am going to be making beer battered fish tacos and the recipe that I’m using as my resource comes from daily – of life this is a fairly new youtube channel and I think you guys should check it out and show this new YouTube or some love her channel has a

Lot of how to do it yourself and even delicious recipe videos so go check it out and this is the video that I will be using as my resource for my beer battered fish tacos today so let’s get started so I went to the market and I

Bought a little over a pound of cod I think if you use a nice sturdy white fish it’ll work well catfish or thalaaq or other choices so here I’m just going to slice and cut my fish into manageable sizes or pieces that will fit on to my

Mini Street taco both es that I purchased today and because the fish itself does take a lot of prep work that’s why I opted to go ahead and buy store-bought 30s but you can most definitely make them and I do have recipes for corn tortillas and flour

Tortillas should you want to check that out on my youtube channel okay so what I’m doing now is I’m going to finish cutting my fish pieces and as I do that I’m placing it on a baking sheet lined with paper towels you want to make sure

You get your fish nice and dry and by the way I did give it a a pre rinse in cold water before I started cutting it so all the more reason to put it on paper towels but again you want to make sure your fish is nice and dry and not

Slimy because we want to ensure that the batter will stick to the fish so I’m just going to finish cutting it and then I’m going to get more paper towels and dr2 fish okay so now that this is done I am going to place this in my refrigerator and

Work on the batter so here I have 3/4 of a cup of flour I have a quarter cup of corn starch and one teaspoon of baking powder and I am just going to combine this and whisk it to make sure that it’s all mixed together okay so now that that

Is mixed I am going to show you the rest of the ingredients I will be using one full tablespoon of paprika two teaspoons of cayenne pepper one teaspoon of onion powder two teaspoons of garlic powder one teaspoon of salt and one teaspoon of white pepper you could use black pepper

I also have one large egg that I will be using along with one cup of beer and I will be using mobile today you can use any beer of your choice it works so now I’m just going to combine the rest of the ingredients into the batter and give

It a good whisk to make sure that it’s mixed and combined well and I did want to mention that the original recipe that I found on daily – of life did not actually call for the use of garlic powder or onion powder but I like to add

That anyways into my flour judges or batter so you don’t have to add that because I’m sure the original recipe is just fine okay so my batter is mixed well and it smells great by the way and I also wanted to show you something you could

Substitute for the beer if you find that you don’t have beer or you just choose not to use beer another alternative would be a mineral water I always keep the pacheco in my house because I love it so if you don’t want to use beer this

Is another option to give you that same crispy texture in a beer batter the carbonation works the same so that’s just a tip or something to think about okay so now I am preheating my oil and by the way when you’re frying the fish you want to make sure the temperature is

Somewhere between 350 degrees to 375 degrees Fahrenheit those are good temperatures for frying so I’m just gonna let this come up to temperature and I am so ready to fry this fish in the meantime I am just going to go ahead and dredge all of my fish into the batter I’m just gonna

Place it in the batter move it around a little bit make sure that it’s evenly coated while I’m waiting for my oil to come up to temperature okay so now that that is all submerged and dredged getting coated into my batter I want to show you that when I

Was preheating my pan I pretty much keep it on a medium to medium-high heat my knobs are numbered from like 1 to 10 or 1 to 9 and I have it around a 7 or 6 when you’re bringing your oil up to temperature just remember to keep it on

A steady gradual heat you don’t want to use a high heat because eventually you’re gonna end up burning your fish so now let’s get to frying I’m just going to place around 4 pieces of my fish and I’m going to fry them around 3 to 4 minutes on each side

Now the cook time could vary because there’s no accurate way of telling you how thin or thick you’re going to slice your fish pieces so just watch for the golden color of the crust and maybe take one out and test it I’m sure there’s a more accurate scientific way to tell you

How to fry your fish but that’s just the way I do it to be safe the color of this fish is absolutely beautiful and I really think the paprika and cayenne have a lot to do with the color but I have to go ahead and dig in

And give this crust a try the crust is so crispy and the fish is tender it’s so good okay so let’s talk toppings I am going to be using a red cabbage that I finly sliced and now I’m just going to dress it very simply I’m going to use

Half of this juicy lime squeeze it all over the cabbage and season it with some salt and pepper now what would a fish taco be without a creamy sauce the way I’m going to do my sauce is very simple I’m taking 1/2 a cup of mayonnaise and I’m going to add

One cup of Mexican crema and if you don’t have Mexican crema you could also use sour cream and just thin it out with some milk so that’s another option next I’m going to add the other half of the lime I’m just going to squeeze that in

And then I’m going to add some hot sauce and I’m going to be using a Louisiana Hot Sauce but there’s also thup at the should you choose to use that or any hot sauce that you have in your refrigerator and it’s as simple as that it’s creamy spicy and cool all at the

Same time and it goes great with these tacos and like always I will be putting the recipes for all of this in the description box below and I’m actually adding more hot sauce I used about two and a half tablespoons of hot sauce okay so my cabbage and cream sauce are

Done and my fish is fried I’m ready to make some tacos so I went ahead and warmed up my corn throat yes and now I’m going to put everything together you can most definitely garnish your tacos with cilantro green onion avocado but this is just a simple variation of a

Fish taco and it’s still delicious I hope you give this recipe a try I hope you like it and thanks for watching hey guys you can click on the video icons for more recipes or you can click on my picture icon to subscribe thanks for watching
