I’m gonna use it for my at work (construction) lunch so it can be in a stew form.

Was considering just roasting it but not sure if it’ll be tough as can be.

    Borscht soup. I just made some with cabbage and carrots, topped with sour cream and fresh dill is so good.

    You can braise it with crushed tomatoes, maybe some heavy cream, seasonings and eat it with roasted eggplant and lots of grated Parm on top.

  3. Braised steak and onions. Then you can use some of that braised steak as a base for a great soup as well.

    How about a beef stew. Brown the meat, throw it into a crockpot with potatoes, carrots, seasoning and broth. Cook till tender.

    Look up Bon Appetite’s “beef and bacon stew” recipe. It’s heavenly. I’ll be making it today due to popular demand from friends.

    Beef barbaco tacos. Get some 1 carb taco tortillas, make some Pico de Gallo, some Honduran crema g a sprinkle of cheese

    Got so cracking tacos! Probably be able to smash 3 and keep to like 10-15g carbs.

    I would sear these off in batches, add to a dutch oven or crockpot with sliced onions, garlic and beef broth and cook low and slow for a few hours
    Stew beef can be pretty tough; I never use it for stew but it’s hard to pass on it when it’s at a decent price – low & slow is the only way imo

    Whatever you make, make it in an instant pot or slow simmer it. We use it all the time, it just needs treated right. It’s usually tough bits and pieces, but cooking it one of these will yield the best results.

    Hungarian Goulash …. yum!

    Tons of recipes on line … my mom made it, I picked up the recipe from her before she passed away and now my wife also makes it. Just ladel it over boiled potatoes or egg noodles and you have a nice hearty meal.

  11. Beef stew. Just cook it awhile and it’ll be fork tender. Swap rutabagas for potatoes if you want to keto-ify it.

    Get some tenderizer (like Accent), that will help regardless.

    I buy a ton of stew meat because we love to have **”steak bites!”.** I used to brown it in a pan first then stick it in the oven, but I found last time that all I have to do is:

    1. Preheat oven to 375;
    2. put a handful or two of the meat (depending on how much you want to make; meat should not overlap) on an oiled cookie sheet;
    3. if you want veggies, add some halved radishes and a couple of carrots chopped into 1″ segments (this is for a serving for 2 people, so we get a little carb but not too much), maybe one small quartered onion but watch the carbs;
    4. season the whole thing with salt, pepper, garlic powder, and anything else you like, stir it all around a bit, then bake at 375 for 30-35 mins. Everything gets done and it’s very tasty. 🙂 You can experiment, if that’s not enough time depending on the size of the chunks, too.

    Tip: Separate out the radishes when done and mash them with some butter. Delish!

    PS: If you do use Accent on the meat, salt the veggies separately and don’t also salt the meat or it’ll be too salty!

    Chili or stew would be first on my list. Definitely would use a crock pot.
