How to prepare salt
ingredients
Cauliflower 10 kilos

First, separate the cauliflowers and chop them coarsely, put them in a bowl of water, change the water several times, put them in a colander and let them drain the excess water, then spread them on a clean cloth until they are completely dry. It should not be wet. Chop the celery, pour water into the basin and wash it several times, then leave it to dry. Trim and wash the vegetables and leave them to dry. You can chop them a little if you like. Peel the garlic, set aside and wash the hot peppers to dry.

Wash the cucumbers and make a few holes in them with a toothpick so that the homemade salt will be crispy when it is cooked, then put the cucumbers on a cloth to dry. You can chop some cucumbers finely and some coarsely. Peel the carrot and chop it coarsely with a Dalbar or simple cutter and place it on a damp cloth to dry

Place a container as a measuring cup and measure both water and vinegar using the same measure. For every 14 glasses of water, pour half a cup of vinegar and a pinch of salt into the pot and let it boil, then remove from the heat. Remove and add salt and stir until it dissolves.

Wash and dry the desired glass containers. Now put the dried vegetables in layers in such a way that you put a layer of vegetables and on them put some aromatic herbs, garlic and hot pepper. Repeat these layers (as well as peas and coriander seeds). Also use it because chickpeas make the salt more crispy) until it is finished, then pour the mixture of vinegar and salt water on the container and close the container tightly, then leave it outside the refrigerator for 4 days and in the refrigerator for a week until the salt is ready.
