this recipe has a ton of spices, but in its simplest form, carrots roasted with olive oil, salt, pepper and a little bit of sugar are absolutely delicious. adjust as you see fit, and dive right in!
For the marinade:
-4 large carrots, sliced lengthwise
-1/4 cup olive oil
-1/4 tsp cayenne pepper
-1 tsp smoked paprika
-1/2 tsp harissa seasoning
-1/2 tsp onion powder
-1/2 tsp garlic powder
-1 tsp kosher salt
-1/2 tsp black pepper
-1 tbsp brown sugar
-2 tbsp maple syrup
-juice or 1/2 orange
For the yogurt sauce:
-1/4 cup yogurt
-3 cloves garlic, minced
-juice of 1/2 orange
-juice of 1/2 lemon
-salt & pepper
For garnish:
-fresh dill
-pomegranate arils
-crushed pistachios
1. Preheat the oven to 425F. Slice the carrots lengthwise into equal parts. Mix the olive oil, seasonings, brown sugar, maple syrup, and orange juice. Toss the carrots in the marinade, then bake for 30-35 minutes until caramelized and tender.
2. While the carrots roast, make the yogurt sauce. Combine the yogurt, orange juice, lemon juice, and a touch of salt and pepper.
3. Spread the yogurt dip on the bottom of a large plate, then top with the carrots. Garnish with dill, pomegranate, and crushed pistachios.
