Imagine you could make a rich chocolate mousse out of just two ingredients chocolate and water. Let me tell you, it’s possible. I tried it. It works and it tastes incredible. All you need is one simple technique, and I’m going to show you how to nail it.

You’re probably thinking, What the hell are you talking about? Chocolate and water do not go together. If you’ve ever added water to liquid chocolate, this is what happens. It instantly seizes and becomes really stiff. But all of this changed thanks to this man. Hervé This.

A French chemist who is also known as the father of molecular gastronomy. Hervé discovered that if you add enough boiling water a large amount, then the fats inside the chocolate don’t clump together but actually suspend evenly. And from there you can turn it into mousse with one simple trick.

Okay. First let’s chat about the ingredients. I’m using 74% dark chocolate. Darker chocolate contains more fat in the form of cacao butter and the amount of fat matters because it will determine how much water we need to add. There needs to be a certain amount of fat to begin with.

So start with a minimum of 65% dark chocolate. And the higher you go from there, the more water you will need to add. Otherwise the mousse will become really dense. Then we’ve got our water, which we’ll use in three ways. We will need some boiling water to combine with the chocolate,

We will need a large amount of ice cubes to cool the chocolate back down. And we need some normal water to add to the ice cubes in the bowl. That’s everything. That’s all we need. So let’s make some chocolate mousse.

For step one, we just want to break up all of our chocolate into small pieces so that it melts quicker. Just add it straight to the bowl you’re going to use. This is 250 grams of chocolate, then pour in 210 milliliters of boiling water and whisk it until it is completely melted.

It should look smooth like this. At this point, we’re already halfway there. The next step is to grab a larger bowl and add two good handfuls of ice cubes around 500 grams worth. Pour in enough water just to reach the top of the ice cubes and let the magic begin.

Now, all you need to do is to add the bowl of chocolate to your ice bath and whisk it for around 5 minutes until it begins to thicken. After one minute it looks like this. So not much has changed yet. This is around 2 minutes. Still not much seems to be happening.

It’s one of those things where you think this is never going to work. But honestly, have faith and keep going. After around 4 minutes, the chocolate is starting to thicken a little bit as you whisk it leaves slightly thicker ribbons on the surface and the chocolate looks more velvety.

After 5 minutes, it has thickened even further, and I’m going to take it out of the bowl. We’re taking it out of the ice because the bowl itself is now cold and it’s going to continue to cool down the chocolate even more. At this point things happen really fast.

After just another 30 seconds of whisking, you have a mousse that already leaves peaks like this. A sign that it’s ready. Time to serve. This last part happens really, really quickly, so it’s actually best to take the bowl out of the ice a little bit too early

And then continue to whisk to see if it comes together into a mousse. And if it doesn’t, just cool it down for a little longer and try again. You can just serve it in a glass, but I quite like to heat up a spoon in some boiling water and then make

A quenelle by moving the spoon across and around the chocolate like this. Add that to a plate and your mousse is done. And there we go. Chocolate mousse made with nothing but chocolate and water. Absolutely bonkers. That looks so smooth as well. Mmm. Come on.

Like me, you’re probably thinking, How can that be nice, right? It’s basically just diluted chocolate. It’s chocolate and water. But it tastes so pure. It tastes so rich. You really get all of that chocolate flavor and that water almost has a cooling sensation as the chocolate melts in your mouth.

It’s so refreshing compared to a heavy dessert. Wow. So why did that actually work? When you add enough water to suspend the fat molecules of the chocolate, you’re creating a smooth liquid. If you then slowly cool it back down, the chocolate slowly starts to form again

And attracts the air into those molecules and that creates your mousse. It’s actually one of the easiest desserts you can make at home. But it requires two things the right ratio of chocolate to water and the right duration of whisking and cooling down the chocolate.

But the good news is that if it goes wrong, you can use the same batch to fix it. Let’s say your chocolate stays liquidy and just doesn’t form a mousse at all. That means there’s not enough fat in the chocolate, so melt it again add more

Chocolate to it and then cool it down until it forms that mousse. If the chocolate is really, really dense, that means you don’t have enough water in there. So again, just melt it, add a little bit more water and then cool it back down.

It could also be that your chocolate mousse becomes grainy. That is a sign that you’ve over-whisked the chocolate. So in that case, just melt it again, cool it back down, but this time whisk it a little less long. But there you go. A super simple way to make chocolate mousse at home.

And because most dark chocolate happens to be vegan, this chocolate mousse is also plant-based. You can flavour it in whatever way you like. You can add some dessert wine to the liquid chocolate. You can add some flaky salt on top of the mousse or even some extra virgin olive oil, if you like.

  1. This is definitely interesting and a very forgiving method which is great. I was never into chocolate desserts much but I like the sound of this because it's so simple and dark chocolate has long been my preference.
