Looking for a healthy and easy dinner. Try this healthy chicken fried rice. It takes about 30 minutes to from start to finish.
INGREDIENTS
1 pound chicken breast, diced
3 cups cooked rice
10oz bag frozen cauliflower rice
10oz bag frozen peas and carrots
3 eggs
1/4-1/2 cup soy sauce
1 Tbsp olive oil
1 tsp garlic powder
salt/pepper
DIRECTIONS
Heat a large frying pan over medium heat. Add Olive oil and chicken. Season chicken with garlic powder, salt and pepper. Cook chicken until no longer pink in the middle.
Move chicken to one side of the pan and scramble eggs. Mix chicken and eggs together.
Add rice, cauliflower rice, peas and carrots and mix well.
Add soy sauce and cook on low for 10-15 minutes.
