




I’m in love with a flour blend called Fiber Gourmet (found on Amazon) and it makes amazing bagels. They’re best right out of the oven or toasted the next day(s).
Makes 4 bagels:
3/4 c warm water
1/2 tsp cane sugar
1 1/4 tsp active dry yeast
BLOOM
Mix in 1 Tbs sugar free honey to dissolve
1 3/4 c flour
3/4 tsp salt
WHISK
Add wet into dry, knead 6-7 minutes. Proof 1-1.5 hours. Punch down, shape. Fill 3 qt pot about 2/3 full of water, add about 2 tsp baking soda, bring to boil, turn to simmer. Place bagels one at a time in water bath 30 seconds. Egg wash tops, sprinkle seasoning. 425 degrees 20-25 minutes.
They have a chewy crust and soft sponge with some texture. Less bitter and lighter wheat taste than carbalose flour.
