Recipe:
2 Zucchinis (Sliced 1 in thick) or Yellow Bell Pepper or Eggplant
1 Red Onion (Slice 1 in thick)
1 cup Grape Tomatoes (Halved)
1 ripe Avocado (chopped)
1 cup of fresh bocconcini (small mozzarella balls)
Balsamic Vinaigrette to taste

Grill the onion and zucchini or eggplant or pepper. Chop up once veggies have lost crispness. Mix the rest of the ingredients together in a bowl.

Going to share with you guys now this is an awesome side dish that you can make for your barbecues instead of you know a coleslaw or a pasta salad and so instead of the zucchini you can also use grilled eggplant or you could also use grilled bell peppers

Zucchini was locally farmed today and it was the cheapest so that’s what i went with so let’s turn over the vegetables and see how they’re grilling so here i have the final product and again this is a great grilled summer salad today i used grilled zucchini grilled red onion some fresh mozzarella

  3. @MarissaLaurenable You may want to see a good chiropractor who is also a naturopath. i had gluten intolerance, fibromylgia, candida and could not eat diary prior to seeing him. all these problems went away with chiro and supplements, some acupuncture as well. no way to live life.

  4. You should take your onion, mushroom, zucchini, yellow squash and put it in aluminum foil with some terriyaki on the grill. It is wonderful.
