We all love one pot dishes. And this casserole fits that category. Especially if you use rotisserie chicken. It is so easy and quick to put together. The hardest part is cooking and de-boning the chicken. You have all you need in one casserole. Add a salad or even if you want, cook some green beans and you have a wonderful meal. Ingredients:
2 chicken breasts, boiled, shredded into large chunks
1/2 cup broth reserved
1 can cream of chicken soup
2 cups cooked rice
1 cup seasoned bread crumbs
1/2 cup mayonnaise
1 – 4/5 oz can diced green chilis
1 cup shredded cheddar cheese
salt & pepper to taste

Directions:
Preheat oven to 375 degrees.
Place chicken in heavy bottomed pot. Cover chicken with water. Add 2 tsp salt and bring to a boil. Cook until chicken is completely done, about 25 minutes. Remove to a plate to cool. Reserve 1/2 cup of the broth. When chicken is cool enough to handle, pull apart in large pieces.
In a large bowl, combine chicken, cream of chicken soup, mayonnaise, diced chilis, and cheese. Salt and pepper to taste. Remember cheese and soup will be salty.
Using non-stick cooking spray, spray bottom of a 9X9 casserole dish. Spread cooked rice in bottom of dish. Cover with chicken mixture. Top with breadcrumbs. Drizzle with the reserved chicken broth.
Bake at 375 degrees 30-35 minutes, until brown and bubbly.

Um I’m going to start putting it together it’s so simple you can use a rotisserie chicken if you want you can use actually if you want to you can use canned chicken I’m going to go ahead and spray my baking dish with some non-stick spray and and I’m going to set that

Right here while we mix everything else up I have the two chicken breast now I’m going to put in one can of cream of chicken soup I’m going to get that put in and stirred together I have one can of diced green chilies this is a 4 oz

Little bit over a cup of cheese Che now you can use cheddar cheese this is a triple cheddar blend and we’re going to stir all of this together see it’s that simple now here in my rice cooker I have cooked my rice I need two cups so I told you this

Is going to be one of the simplest and most delicious ious casseroles that you’ve ever put together and if you buy rotisserie chicken it’s going to be even that much more simple you can buy rotisserie chicken and possibly get two meals out of it okay so we have that

Combined now what I’m going to do is in the bottom of my sprayed dish here I’m going to put two cups of this cooked rice we’re just going to spread it around you know we like rice we love rice and you know to make it even easier

You could use Minute Rice and I have seen in the grocery store where they have some already prepar paired rice that all you have to do is pop in the microwave and heat up it comes in a little container and you can get jasine rice white rice and um

Hey use that anything to make it easy now we’re going to put this mixture right on top look at there ooh now I did not put any extra salt in this because that cheese is salty the soup is salty now I think what I’m going to do

Is I think I am going to sprinkle a little bit of black pepper on the top look at there how beautiful is that can you see that how long have we been doing this and less than 5 minutes and we’ve got it put together looky

There now I I have bread crumbs now I had plain breadcrumbs and I seasoned them up with some parsley some garlic powder and some onion powder but you can buy seasoned breadcrumbs and keep them they’re delicious and so we’re going to sprinkle that right on top let’s spread it

Out and we’re going to moisten it now from that chicken that we cooked and if you use the rotisserie chicken you can use a box stock there’s nothing wrong with that I have a half a cup of chicken stock and I’m going to pour it on top of these breadcrumbs and moisten

Them and that’s it this casserole is done and it is ready to go in the oven preheated 375 30 to 35 minutes until it is golden brown on top our casserole is ready and I’m ready to take it out of the oven and

Side what more do we need let’s give this a try let’s see if we can oh my goodness y that chicken the rice those green chilies that flavor just comes through it’s not overpowering it just gives it an amazing taste and you’ve got the bread crumbs um that soup that’s in

  5. I am so glad I live in New Mexico and have fresh green chile available (I have a designated green chile freezer) I’m going to try this but I’ll probably use panko or more cheese on top, can wait to try with fresh roasted green chile instead of a can.

  8. That's another great recipe Karen, thank you for sharing it. When you were adding the soup, it gave me the idea of doing half a can can of the chicken soup and half a can of cream of mushroom soup or even just adding fresh sliced mushrooms.
    But there's obviously many ways to zhuz it up.

  9. I had this many years ago, and it is delicious, a comfort food as well 😋I will omit the mayo, only because I don’t like mayo, and substitute. The one I had didn’t have mayo, must of been a different version. Love your breadcrumb topping😋
