Ready in no time, these griddled peppers with feta & a lemon dressing make a perfect side dish. Any crumbly cheese will do, but I like the saltiness you get from Feta.
Ingredients: serves 2 as a side dish
6 x Turkish peppers* (washed & dried)
olive oil
Dressing:
3 Tbsp XV Olive Oil
1 Tbsp fresh lemon juice
salt & pepper to season
Feta (100g (crumbled)
Dill (handful, washed & finely chopped)
* (If using green bell peppers – use 2-3 – slice in half & de-seed)
