This Avocado Shrimp Salsa recipe is a cross between a pico de gallo, guacamole and ceviche. The plump flavorful bites of shrimp, an avocado that adds the perfect amount of creaminess, crunchy cucumber, fresh tomatoes of course and fresh lime juice.

Shrimp Avocado Salsa Ingredients:
►1 lb shrimp (we used 21-25 count), peeled and deveined
►Salt and black pepper to taste
►1 Tbsp olive oil
►Juice of 3 medium limes
►2 medium/large avocados, peeled, pitted and diced
►1/2 English cucumber, diced
►3 medium (or 4 Roma) tomatoes, diced
►1 small onion, finely diced
►1/2 bunch Cilantro, chopped
►Tortilla chips and hot sauce to serve

– Hey, it’s Natasha of NatashasKitchen.com and this is our favorite salsa of all time. It’s loaded with shrimp, avocado, and one surprising ingredient. We’ll start with one pound of peeled and deveined shrimp. Lightly season that with salt and pepper. Place a large skillet over medium-high heat and add a tablespoon of oil.

Once that’s hot, add the shrimp in a single layer and saute for about three minutes total or just until cooked through. Remove the shrimp from the pan so they don’t overcook. Then coarsely chop them up and transfer to a large mixing bowl. Squeeze the juice of three medium limes right over your shrimp. Be sure to use fresh lime juice because it makes all the difference. Give that a stir and let the shrimp sit and marinate while you chop the rest of your ingredients. Dice half of an english cucumber, and I’m using garden cucumbers here,

And add them to the mixing bowl. Now dice three to four medium-firm tomatoes and add them to the mixing bowl. Now peel, pit, and dice two large avocados. You can use medium avocados but I prefer the large ones. And add them right to the mixing bowl. There is no such thing as too much avocado. You can’t have a salsa without onion so finely dice one small onion and add it to the bowl. Onion pretty much always makes me cry but it is so worth it. Last but not least, chop and add half a bunch of fresh cilantro. I am so excited right now because all that’s left to do is stir. Make sure everything is coated in that super yummy

Fresh lime juice ’cause that’s where the flavor’s at in this salsa. To be honest, I’m desperate for it because this is my very favorite salsa of all time. My husband and I eat this all the time. The avocado makes it a little bit creamy and it smells so good.

I love that the cucumber kind of bulks it up and it tastes really good, adds a nice crunch. Are you guys looking at this? I know you wanna dunk a chip in here. Okay, that’s what I’m gonna do right now. Oh. Dunh dunh dunh. Here we go. Mmm. That’s so good. The lime juice gives it such a fresh pop of flavor. It’s also really good with hot sauce. So if you want to serve it with hot sauce, if you like a little heat, I would suggest that, that’s what we do. I hope you guys love this recipe.

  5. ceviche taste better with clamato juice an you put the avocado in before your eat it not in the entire bow gose bad a lot sooner when you do that

  6. Can't stop laughing at all the non Mexicans/latinos telling us it isn't ceviche when it is 😆. Ceviche can be made with pre cooked shrimp or raw shrimp cooked in the lime acid. Ceviche can also be made with different seafood like fish, crab, octopus, etc. We love sharing our food and watching others make it, but please call it what it is.

  7. Hi Natasha😊what can I use instead of tomatoes. Due to arthritus, tomatoes is acidity doctor reccomend I not have it. Please email me and let me know any substitution for tomatoes for any recipes
