This is an awesome chicken parmesan recipe and I made this video to be quick and easy to follow, only 2 minutes long so you don’t need to skip through all the extra filler other video are full of.

Recipe

Marinara sauce
In a pan add olive oil, chopped onion/garlic, a Fresno pepper, and some basil. Cook that down a bit then add tomato paste. After that cooks add a little red wine to deglaze any bits stuck to the bottom. Now add a good tomato puree and let simmer to evaporate most the water out of the sauce. Add salt and pepper to taste.

dredge the chicken in flour then in a beaten egg and then back into the flour but add a bit of panko to the flour. the trick to a crispy crust is to press the panko/flour mix firmly into the chicken and then let it rest while you heat up some oil to 300F to 350F. once the oil is hot submerge the floured chicken into the oil for about 6 minutes then pull it out to rest for 1 minute. now put the chicken back into the oil till golden brown or an internal of 165F has been reached.

chicken sauce and cheese
place the cooked chicken on an oven safe pan and cover the top with the marinara sauce and cover the sauce with a low moisture mozzarella. now place the chicken in the oven on broil and keep a close eye on it. this part will be fast, once the cheese begins to have some brown spots on it pull it out and top with some fresh basil and enjoy!
