
The goal was to make a creamy and not watery mashed cauliflower without the usual dairy or pseudo vegan dairy.
I give you mashed cauliflower with creamy cannelloni beans.
Just steam the head of cauliflower, add about a cup of the beans, a bit of the aquafaba, 2oz oat milk, onion, garlic and seasoning.
Whip it up then into a baking dish. Top with coarse bread crumbs and bake for 20 or so minutes at 350 or until browned.
Very yummy.
