Caesar Salad Dressing Recipe

3 x Anchovy Fillets (Chopped)
1 x Clove of Garlic (finely grated)
1 x Large Egg Yolk
30ml x Lemon Juice
5g x Dijon Mustard
190ml x Neutral Flavoured Oil
15g x Parmesan (finely grated)
Salt & Black Pepper
Few Drops of Warm Water (optional)

1. Chop the anchovy fillets as small as you can and finely grate the garlic on a microplane. Set to one side.

2. Next in a mixing bowl place the egg yolk, lemon juice, and Dijon mustard and mix together.

3. Slowly drizzle the oil into the egg mixture while whisking continuously until all of the oil is incorporated into the mixture. The dressing should be quite thick like a mayonnaise.

4. Add in the chopped anchovies, garlic, grated parmesan and season with salt and pepper to taste. Mix together. You can Thin the dressing down with a few drops of warm water if you like.
