Hiy folks and welcome to the hillbilly kitchen today we’re making a chicken cobbler that’s right I said chicken cobbler this is kind of a New Concept and there’s versions of this recipe going around everywhere but and it is a true cobbler and this recipe is kind of

Like chicken pot pie meets Chicken and Waffles or chicken pop pie chicken and waffles and chicken and dumplings all go together so anyway it’s pretty simple to mix up and quick and it just has a few simple ingredients you need about three cups of shredded chicken you can use

Deli chicken you can use canned chicken you can use leftover baked chicken uh you could even use leftover fried chicken and shred it up you just need about three cups of shredded chicken and if you ain’t got quite three cups it’ll still work you need a couple cups of

Mixed vegetables I’m using the corn peas carrots and green beans just one bag of frozen mixed vegetables you need 2 to three cups of pancake mix a complete pancake mix now I when I first tried this I tried it with two cups I thought the bread layer on the top was a little

Bit thin so I use three cups you need a can of cream of chicken soup two cups of stock or um some Buon and water you can use Buon and water two cups of any kind of milk and a stick of butter now I also add some spices to mine just some salt

And pepper and onion it would be good with a little red pepper just like 1/4 teaspoon of red pepper to give it a little bit of bite uh any other spices that you like you could add into it you could add a little dash of hot sauce into it even if you wanted

To but anyway we start this and we layer it it’s a dump casserole and you don’t ever stir anything in your pan we’re going to start by putting our butter in the pan and we’re going to put it in the oven turn the oven on 350° when you put your butter in there

And your butter will melt in the pan as the oven preheats and that’s your first layer so go ahead and stick this in the oven and turn it on 350 okay now while that’s preheating if you haven’t shredded your chicken shred your chicken and we’re going to mix up our pancake

Mix and our milk now you do have to do a little bit of mixing but you’re not going to mix anything once you put it in that pan and I’m using like I said three cups you can do a slightly thinner bread layer and do

Two cups and I know pancake mix on a chicken casseroll that just seems strange but it really is good I was shocked and I do think you need the three cups but that’s my opinion and also when we get our pancake mix mixed up we are going to add our can

Of cream of chicken soup into our stock or our um Buon and water whichever one you have you know the Buon and water is quite a bit less expensive I had some stock that I bought on sale and I don’t usually use the stock I usually do use

Buon and water but it was about to expire so I’m using it I also don’t normally cook with canned soup but you know it’s almost Christmas and we’re all busy and sometimes you need that quick week night dinner and a can of soupa speed it up

So you know if you’re in a hurry go ahead and get that canned soup and for a recipe like this you’re probably putting it together cuz you’re in a hurry but you want to mix that together pretty well now I’m going to add a few spices to this this is totally optional

And like I said what spices you add are entirely up to you but I’m going to put just a little bit of salt in it um and that’ll also depend on what kind of stock or Buon you’re using not too much but I found that it needed a little bit

With the vegetables and my chicken also didn’t have much salt in it and I’m going to add a little bit of black pepper and I’m doing that in my butter because the butter is going to rise all up through the whole dish and it will disperse these seasonings

And I’m doing a little onion powder and this is just a taste you could add a little garlic to it too or like I said just any spice you wanted Let’s see we got to get the rest of this butter kind of melted here so I’m just going to stir around in my

Pan and finish the melting process there okay now one more little tip here once your butter is melted kind of tip your casserole dish and get it up on the edges of your casserole dish just a little bit that will keep your um topping you know the pancake mix

And stuff from sticking to the edge of your casserole dish so bad and it’ll make it easier to wash when you’re done and I guess you could spray the pan but I mean you’ve got melted butter in it so that kind of does it now once you got

Your melted butter if you want to do spices do your spices add your chicken and we ain’t stirring nothing else from this point braid it out a little bit but don’t stir it oh and you do need a 9×13 pan for this don’t think I said that add

Your vegetables and spread them out over top of the chicken all right and you can use any vegetables you want to but like I said this is kind of gives you the flavor of chicken pot pie and then we’re going to add our pancake mix

And we’re just going to pour it all over the top of the vegetables and the chicken and the butter try to get a nice kind of even layer there and now we’re going to add our soup and our broth and just kind of pour it all over the top and I know this

Don’t look so good right now but I promise you when it’s baked it’s going to look really good and not only that the smell is just oh my goodness you should smell it all right now we’re going to put this in our oven that it’s preheated to 350° for about 45 50 minutes

Your um pancake layer should be done and it should be golden brown and it should be bubbling around the edges like a chicken pot pie now in a little bit less than an hour we are going to have this delicious bubbly golden brown casserole now you can see that it is very jiggly

You don’t want to dip it out immediately you want to give this oh 5 minutes maybe to sit and rest and what that 5 minutes is going to do is it’s going to allow the gravy in it to thicken up the um pancake batter mixing with the broth and the soup is

Going to make a really thick Rich gravy and we’ve talked before about how when your gravy starts to cool it thickens up so you don’t want it super thick when you’re cooking it if you get it thick when you’re cooking it you’ll have to cut your gravy with a knife and that’s

Why it’s a little bit jiggly right now when you take it out of the oven just let it sit about 5 minutes before you dip it out and in 5 minutes it will be perfect you’ll have the breading from the pancake batter you’ll have the gravy and the vegetables and the chicken and

It’s just a wonderful dinner and you can have it on the table in less than an hour it only takes maybe well you can have it mixed up by the time the oven’s preheated it never takes longer than that to mix it up so this is a good one

For week nights and it’s a good one to get you through the busy holidays you can make it with leftover turkey by the way for after Thanksgiving and Christmas and let’s face it between Thanksgiving and Christmas we all need some dinners like this that we can just take 5

  9. Chicken Cobbler – Dump Casserole
    Put GOD first!

    Ingredients:
    3 cups cooked shredded Chicken
    1 can cream of chicken soup
    2 cups Broth or Water & Bouillon
    2 cups Milk
    2 cups Veggies
    3 cups Pancake Mix
    1 stick Butter
    Salt & pepper & onion powder to taste

    It gets layered, not stirred.
    Put butter in pan, 13×9, in a 350 degree oven. It will melt as it preheats.
    While oven heats, shred chicken.
    Mix together pancake mix and milk.
    Mix together broth and soup.
    Add spices to melted butter, as it will rise and disperse all through the dish, stir. Get that melted butter to go up the sides of the casserole dish.
    Layer chicken over butter- no stirring.
    Layer veggies over chicken- no stirring.
    Layer pancake mix over chicken- no stirring.
    Layer soup/broth mix over pancake mix- no stirring.
    350 degrees, 45-50 minutes.
    Golden brown and bubbling around edges.
    If jiggly, let it rest for 5 minutes. It will make a thick rich gravy.
