Does anyone know why this happened to my oat milk? I made it last night and let it chill in the fridge, now this is what it looks like (first photo is today, second photo is from last night).
If so, I think that’s pretty much going to just happen with a lot of homemade plant based milks.
If you’re looking for it to stay homogenized, in my experience adding a bit of potato or corn will help. If you use corn, heating to around 190F will really thicken and stabilize it.

Without added emulsifiers or thickeners any homemade nondairy milk will separate. Just shake it up before using. Totally fine

Some form of binder like xantham gum or amylase added to the blender before mixing does the trick
