Hello and welcome to this week’s YouTube live with exam revision today we’ll be looking at Junior cycle home economics with Amy con the topic we’ll be looking at is meal planning and exam questions meal planning um comes up um in all of the sample papers and in the 2022 exam

Um every week from all of our subjects so today’s plan we’re going to look at meal planning one we’re going to look at exam questions and then we’re going to look at the second part of meal planning and exam questions this is a very topical um area and should be

Revised for this year’s Junior cycle exam some meal planning learning intentions for this section we’re going to explain the purpose of eating well we’re going to discuss meal planning guidelines we’re going to Define menu we’re going to outline the correct method for writing a menu we’re going to

Discuss the functions of a breakfast we’re going to list suitable healthy foods for a breakfast we’re going to design a healthy breakfast menu outline how to prepare a healthy packed meal the suitable foods for a healthy packed meal and design a menu for a healthy packed Lunch so first of all I’d like you to think about what you know about meal planning I’d always get my students to do this maybe do it in a blue pen and then at the end of the chapter come back to it and write it maybe in a red pen

What you have learned and it you know gives you a visual representation of how much you already know and how much you’ve learned at the end of the chapter so why eat well so it prevents excessive weight gain it provides your body with all the nutrients that it

Needs so I would suggest going over your macronutrients and micronutrients so your macronutrients are protein fats and carbohydrates your micronutrients are your vitamins your fat and water soluble vitamins your minerals and then water I’d also suggest reviewing the food pyramid the food pyramid is the foundation of most of homech as is your

Macro and micronutrients so I’d suggest looking over that all that can be found on the exam revision website under the junior cycle homech under strand one so it helps you to keep your skin clear it maintains strong bones and teeth because you’re getting a variety of macro and micronutrients it helps you

To concentrate so if you eat breakfast first thing you’re breaking the fast therefore you are going to be more alert when you’re going into school so she should always eat something before school and it gives you energy so you need energy for all and basically everything you do as a living

Organism so meal planning guidelines these next three uh slides are super important I will be learning them off by heart they come up every single year in all of the sample exam papers they also come up in the 22 uh 2022 exam as well and I suggest you know there’s a high

Chance is going to come up in this year’s paper as well but we can’t guarantee anything so first of all nutrition then we have special diets variety money equipment number of people time occasion likes and dislikes and finally sustainability so these would be the key headings so you can’t just write down

Nutrition you won’t get full marks you’ll barely get any marks however do you know if you can’t remember anything just you know write it down uh these it’s some um marks and what I would always suggest to my students is go at the SE approach so State explain and

Give an example so say for example you’re stating the term nutrition you’re explaining it and you’re relating the example to it so usually the SEC in the question will say I you know maybe it’s for a teenager you’re designing the menu for or a family related back to their

Needs so you should look up um the special diets and you should also look up meal planning guidelines throughout the life cycle and you can find that all in exam revision and some of our past YouTube videos you’re then going to you know discuss your example in detail

You’re always relating back to the food permit um so food permit is super important and most schools have them in your school journals so they’re very accessible so you can just look them up in an exam scenario they usually only ask you for four or five of these but I

Would be learning off to know six or so make sure you know them very well and because not all of them are going to see or Su you know the question that you have been given so this would be um one of from there so my S or state would be nutrition and

Then you talk about how nutritious and balance the meal is so you need to know full sentences you then for include your example after that part so say if it’s for I don’t know like a child you’d say you know um I’ve included um you know five to seven piece of fruit

And veg a day or you have included you know um your source of dairy um carbohydrates you’re limiting foods from the top of the food par and stuff like that again with special diets you should refer back to our YouTube videos and we have done um YouTube videos on all the

Different types of special diets so for example if you’re preparing a meal for somewhat special di like a Celiac you then say after that Celiac is a part who can’t digest gluten and gluten you know um is found in a lot of carbohydrate foods for example like pasta and bread

So therefore you need to take that into consideration so for example maybe you’d have gluten naturally gluten-free products in the meal or maybe you’d opt for going you know gluten-free pasta or something like that and then you know if you’re buying gluten-free pasta you need to remember that that’s going to take

Longer to cook so so different stuff like that have special diets impact the meal planning guidelines so variety you don’t just want the same textures you want a mix of foods you want a variety of colors if there’s a mix of foods um if are picky eers they’re more likely

You know to try a couple of things and they might you know if you’re just giving them fish and chips and they don’t like the batter do you know that’s not very good and so it’s not very nutritious you want to give a mix of food so maybe

You’d have um like a shepherd’s pie and you’d have you know peas in it you’d have some carrots and then maybe you’d have um a salad to the side and maybe a couple of baby potatoes so there’s a mix of foods there there’s a variety it’s

Not all the same food color think of the rainbow if you think of yourself if you’re out and about and you get a meal and it’s you know properly presented you’re going to be attracted to it it’s like the cooking exam how you get your 10 out of 100 marks for presentation it

Stands out if a student has you know a colorful dish well presented you know I’m going to remember it more textures and there’s some textures like say if a kid doesn’t like I don’t know and the texture of lasagna well then don’t give them lasagna give them an alternative um cooking method

So think about um like if you have an air fryer no big air fryers you can cook a whole chicken but if you have a small little one are you going to be able to cook whole chicken in that no so then you’re going to have to think about how

You’re going to cook that you’re not going to be able to fry it so you’re going to need an oven to cook it in so different Coco methods need different equipment different time and stuff like that um so money everything comes back to money so what is your budget

Especially with inflation at the moment the general cost of everything has skyrocketed so for for example cheaper cuts of meat are just as nutritious as expensive own brand just as good as expensive so own brand beans as opposed to your fancy beans like your hindes it’s not going to make any difference

Even berries so when my students make um smoothies I’d recommend you know go buy the frozen berries they’re cheaper you can put them in the freezer afterward so they’re not going to waste um and this they’re just as nutritious especially your frozen veg so you know you’re still

Going to have just as many Nutri there and I would often go for frozen veg as opposed to the fresh cuz it’s more convenient okay especially if you’re thinking of families it’s easier to take it out of the freezer than have to go down to Tesco because your carrots are gone off

Moldy so equipment have you got all the equipment you need to make the food so if you’re making a stir fry have you got a walk have if you’re making soup have you got a handheld blender or otherwise it’s going to have to be a you know a

Chunky Soup have you got an oven that’s big enough to cook to know the the turkey for Christmas dinner just stuff like that that you need to take into consideration um number people so the number of people will depend on how much food you need to buy okay you don’t want

To buy too little you don’t want to buy too much you’re going to have to think about that think about for example an adult male might eat more than say um a three or four year-old little girl so you need to think about those type of

Things if you do have extra food made freeze it use it as leftovers we don’t want any food waste and food waste and sustainability is a huge topic now within the new Junior cycle and both I know for homech and Science and many other subjects so time how long do you

Have to cook it and how long will it take to prepare and cook okay sometimes people forget about the preparation so for example if you’re making a lasagna from scratch and you have little kitties running around the place are you going to have enough time to make it all by

Scratch to you know make a r sauce instead of maybe a r sauce You’ use um May maybe like your um rasa cheese or something like that it’ be a lot easier um you know time as well we have enough time to go out to the shops and buy all

The ingredients if they don’t have say for example Ricotta and ALDI and little are you going to have time to go down to D and stuff like that um occasion so is it a formal or informal meal so formal are you having the inlaws over your grandparents over

And you wanted to be you know a little bit more special informal um you know just friends and family um so you might need to you know do something as fancy um likes and dislikes so you need to consider what you and your guests do and don’t like so there’s no point

Making something that’s just going to be us if you’re making PE soup will everyone there actually eat pea soup or is it just you CU otherwise you’re wasting food you’re you know more than likely going to throw it out and if not you’re going to be stuck with a lot of

Pea soup at the freezer um so as well what you don’t like like as well so you’re thinking of stuff that suits everyone or else you can have a variety of small little bits for people to pick away it especially with kids likes and dislikes would be a huge big thing and

Don’t make someone eat something that they don’t like as well next up is sustainability which I already said is very topical at the moment we have released videos on sustainability um on the exam revision YouTube it’s also all on um our uh exam revision website um so sustainability you’re choosing locally

Source ingredients okay you’re thinking of your food miles so for example in if I was to make uh muffins instead of making raspberry and white chocolate or sorry if I was to make yeah raspberry and white chocolate muffins me raspberries at this time of the year and

Or even like say if you’re thinking of like in September you’re going to have to buy the raldi and chances are they’re not growing on the bushes at that time of the year so you’re going to have to get them in for like from like Spain or Peru somewhere like that that’s

Food miles the like the energy it takes to uh put it in the truck then the diesel to bring it to the airport transfer it over to here go to the headquarters of whatever shop bring it down to where you are then you’re collecting it bring it back to your

House stuff like that whereas you could just do maybe blackberries blackberry muffins get the blackberries pick them off the bush then the end of of your garden or go you know walk in the field next or you know in the park or something like that you’re walking

You’re not causing um emissions to be released um it’s a lot more sustainable less food miles um so stuff like saying food miles would be a key like um term and that would really you know W examiners when they’re correcting stuff make sure they’re in season so um Bard

Bea has like a season calendar and they tell you exactly what is available so for example you’re not going to get um blueberries at this time of the year so you might have to get Frozen ones instead or instead of that you’d offer something that might be in season at

This time of the year um minimize packaging so um little house where you can bring in your you’ll buy like a nest and the pack or you know like the vegetables are not packaged up so you just get what you want cuz a lot of the times stuff come packaged and maybe you

Only want 10 Tom mates but you end up having to buy 15 so what are you going to do with the other five or you’re just going to waste them or you’re going to eat them you know and because there’s a lot of like to make the plastic you

Crude oil in there and that’s you know that does not break down and then people aren’t recycling stuff properly they’re putting them in the general waste bins and stuff like that okay and then also relating back to cost if you have more stuff in the bins do you know and you

Have a huge amount you know you could tend you have to get another green bin and stuff like that so stuff like that I’m thinking about food waste as well so you don’t want to be throwing food out so you’re thinking of people’s likes you’re freezing stuff um so that you’re

Not you know maybe you’re batch cooking your freezer stuff like that so they’re your meal planning guidelines so they are like super super important you’re going to State explain and give an example and your example is going to relate back to the question um and the SEC will give you the question and

They’ll have like a little blur about be like oh this is for a family or this is for a teenager so you’re going to relate it back to them there’s no point relating it back to you if it doesn’t relate to the question to um so menu I think everyone should be

Familiar with what a menu is so it’s a list of food served for meal so you anywhere you go whether it’s a cafe McDonald’s whether it is you know um a fancy fancy restaurant you’re going to have to have a menu even for your cooking exam you’re going to have a menu

There for the examiner so when you’re writing a menu these are like the key things you need to think of so you need to decide un suitable foods but also consider nutrition special need special diets and cost so menu ring essentially you’re referring back to all of these meal

Planning guidelines okay so this is like super super super Important you’re aiming to include at least three of the four main food groups so again you’re relating back to the food pyamid so it just shows how super important the food pyamid is that’s what you need to learn off by heart do not offer um too many choices this is going

To be too many choices on the menu you’re not going to you know it’s going to overwhelm you you’re going to get stressed it also means for the person that’s preparing it that’s a lot of different things okay and it means you could have food waste um so you know

Don’t offer a huge amount of choice now I mean if you know there’s a special diet or something you need to actually don’t consider like a sage to the life cycle you’re going to have to offer choices but don’t you know make it too complicated include the methods of

Cooking so for example if I say I’m having eggs on brown bread I’d like to know if it’s boiled if it’s grilled if it’s poached okay because you know you might like a fried egg but you might like a poached egg but because it doesn’t say it you’re

Not going to you know order it so you should name the vegetables and list the accompaniments so say for example even with fruit if you’re having a fruit salad you should say well in the salad is going to be like melons strawberries um blueberries oranges stuff like that

Your accompaniment or for example when you get um a brown bread roll with your soup present the menu neatly boxed and centered separate courses with the starts number six would be um the one where it’s my experience as an examiner in 2022 this is where most people lost

Marks and really they’re they’re stupid marks to um miss out on because it’s stuff that we should all know but we do forget and it’s not stuff to know it’s not like you’re learning off pages and pages of stuff for this you’re just you know remembering neatly boxed centered

Separate courses now in all of the SEC past papers and even in this um 2022 exam they included a box you didn’t even have to box it which was very nice of them try to center it to your best ability but the big one there would be make sure you’re separating courses

Whether that’s a star a line an asteris something to be able to tell the difference between your start and Main and assert Okay and like examiner knows but we can’t actually you the marks unless it’s actually there so there your tips on menu writing and again you’re stating explaining and

Giving an example for each so the functions of a nourishing breakfast so functions is job of purpose nourishing means you know you’re looking at the food permit you’re trying to give the person energy and you know um so they can live a full and healthy life so breakfast breaks fast it’s the first

Meal of the day it is super important it provides your body with all the important nutrients that whether that’s macronutrients so your proteins carbos and fats or your micronutrients so your vitamins fat and water soluble or minerals or water okay you’re getting nutrition from it gives

You energy to start the day so you’re getting that from protein from carbohydrates from a bit of fat as well helps you to concentrate if you haven’t eaten breakfast likelihood is you are going to get hungry maybe you know between 10 and 11 you’re going to start um you know losing concentration in

Class because all you’re thinking about is oh I want to eat something and you might want you mightn’t be craving you know something healthy you might want cocoa pops or you might want a chocolate barar you know which is not good for you at all so by having for example a porridge

In the morning you’re getting slow release of energy from the oats which means you’re going to feel Fuller for longer and and if you know have fortified milk which would you know have H added nutrients like vitamin D and calcium for strong bones and teeth you know you’re taking other box then of

Nutrition so it helps to prevents tiredness okay so you’re going to be super super sleepy teachers can always tell who hasn’t had breakfast because they’ll start to fall asleep in class you’re going to have headaches because you haven’t eaten because you are you know potentially dehydrated and

Accidents may happen so if you’re tired you’re not thinking straight you know you might for example not turn off the oven which could potentially be dangerous or you know you when you’re even in Normal classes you might do something like knock your water bottle over and then someone trips over the

Water you know stuff like that so it allows you to work and exercise more efficiently if you’ve eaten you’re you know on the ball you know what you’re doing you’re more likely to want to exercise um which means you know you’re going to do it properly um and exercise

Is super important for um a healthy body so these be functions of a nourishing breakfast so even if you think of why people eat breakfast so breakfast foods this is like super simple um really really easy again you’re relating back to the food PR so everything stems back to that so

If your fruit and veg Group which be down the back five to seven portions a day so fruit these are only examples now you can put loads more so for example grapefruit segments fruit juice fruit smoothie so in the SEC for menu they would count orange juice as a full meal

In itself and vegetables you could have grilled Tomatoes grilled mushrooms um you could have um avocado your bread cereal potato group so that’s like porridge wheat bxs all brown um brown bread cido bread croissants now croissants wouldn’t be the healthiest thing in the world but we’d rather that you’re eating something than nothing

Your milk groups so you have your milk and teenagers we prefer full fat milk and super milk because you do need that fat for extra energy and you should be burning off when you’re exercising and even when you’re sitting in school and studying and learning you’re burning off

Calories the whole time youve your yogurt your cheese um say if you had a latte in the morning you’re still getting milk now the tannin in the coffee would you know inhibit calcium and vitamin D absorption so it wouldn’t be as good but you know again it’s

Better than having nothing H meat and other protein groups so you could be having eggs and like there’s loads of different ways to have eggs okay you you’re scrambled you’re poached you’re fried and we’ve beans and beans are actually really good for you CU um they’re high H in amino acids and amino

Acids or protein which is for growth and repair grilled rashers and you could be turkey rashers grilled sausages you could be having you know the the vegetarian option black and white pudding okay so while some of these aren’t necessarily healthy and you know sometimes that is better than having

Nothing at all so breakfast food should be super easy for everyone to be able to um do and when you’re thinking of these you’re thinking of the food per okay so a nourishing breakfast menu so nourishing means you know nutrition means you’re thinking of the food pyramid you know you’re thinking of all

The different recommended servings and Portion sizes so for example orange juice um that would be counted as I said as a full meal in itself the SEC in 2022 do you see the way I have all the stars so that tells me that there is you know potentially four different sections

There well three really and so after the the orange juice you’d say porridge with berries and milk okay now we know that porridge is made with either milk or water but you need to be able to put it on the on the actual exam so that the

Examiner knows okay it’s all what’s in your head needs to go on the paper whole grain bread the reason we’re going whole grain instead of white is because you know it’s more nutritious and it has fiber which prevents constipation um with butter and marmalade now do you

Know marmalade may not be something that it depends on say if there’s say breakfast menu they s for an an older person that would suit them but for a younger person do you know they might not have the marmalade do okay then you’d have tea and you’d have to say

With milk okay but super important that you actually put stars or asteris or lines or something between the courses and now in your exam papers when your teacher hasn’t doing it you know usually most people make different different um menus for each one but you can actually stick with the same one and

Just adapt it slightly to whatever nutritional uh or stage in the life cycle that the question is asked you to look at okay so planning packed meals most people should be excellent and very good at this because we all would have got packed meals in primary school and maybe

Even in secondary school and even when you order off the canteen it is technically a packed meal okay so you’re aiming for a nourishing and healthy meal that contains four out of the main food groups you’re varying the food if you’re getting ham sandwiches every single day

You are going to get really fed up you’re not going to want to eat it and you’ll never want to touch your ham sandwich again okay so you want variety so maybe you’d have ham sandwich one day ham and cheese the next ham and cheese lettuce the next day um you could have

Maybe turkey one day you could have tuna okay cuz then you’re getting your omiga 369 which is for you know healthy brain and also good for your joints um so include enough so they won’t get hungry okay um two little you’re going to get hungry consider the person’s age so um

Do you know what an adult might eat for lunch may not be what you know a seven-year-old would eat consider likes and dislikes if you’re going to keep putting in um strawberry yogurt in the lunch box and the kid doesn’t like strawberry yurt the strawberry yurt is

Going to be wasted so you’re wasting money food sustainability you’re thinking of as well and the kid you know is just not going to like it at all and special dietry considerations if there a Celiac you want gluten-free bread they lactose intolerant don’t give them cheese okay give them vegan

Cheese if they can’t have a nut allergy for example make sure there’s no nuts or nothing containing traces of nuts and seeds keep sweet food to a minimum um a lot of schools have policies in which they don’t allow um sweet Foods is particularly enforc in Primary School in

Second level it depends on J know the home department and but keep sweet food to a minimum now you can have natural sugars like oranges and strawberries but don’t be putting in barers of chocolate and choose foods that will keep well and are easy to carry and pack um so if you’re

Giving them soup you know is a seven-year-old going to be able to carry that in safely and open it up is the soup going to stay hot are they going to burn themselves is it going to leak okay so so maybe you know you might give them

A sandwich or you know it depends on the child and the ability it depends on the person’s needs and and that you know it’ll it’ll keep them won’t go all squishy so like banana sandwiches if you made that the night before Turner the bananas are

Going to go Brown by the next day and they won’t be that you know they’ll taste all right but they’ be a bit weird so the person might not want to eat it so maybe you’d have banana like an actual banana in the lunch box and you’d have the bread

Brushers and stuff and then they could use to know that um so planning packed meals suitable foods for packed meals so this is usually quite easy whole grain bed again we’re thinking of all the whole grain stuff because you know it’s very important um it’s meeting the the

Uh food perent guidelines fiber again to prevent constipation and you’re having for example wraps P breads crackers rice cakes paninis scones and bagels stuff like that adding variety you’re having fresh fruit fruit salads and smoothies um you can have nuts and seeds again that’ll depend on the the school’s

Policy and whether there are nut and seed and allergies in the school youve your vegetables and salads so maybe you could have um some carrots that are sliced up like Julian carrots they’d be nice with a bit of homus um again it depends on the child whe

They’re going to eat it also like an adult might be more likely to eat it salad are they going to eat the salad um is there different types of salad they like more is there going to be dressing stuff like that and tint fish um well is really good contains your Omega

369 um does the kid actually like it it is going to create a smell in the room hardboiled eggs they can be actually very nice to eat but again you’re thinking of staging the life cycle so for example would a would an elderly person be able to peel the boiled egg

And you’re also thinking of will the kid eat it and the smell can sometimes be off ping kich and chicken stuff like that again there you might want to warm up so you’re thinking of do you have access to microwave um humus are guacamole you know they’re they’re very good um

Sources of of fat okay but they’re good fat so that means they’re good for the body okay and they’re quite nutritious so these are like suitable Foods now this is not extensive list and you know there’s loads more so sample packed meal menus so for example you could have chicken Caesar

Salad whole meal wrap so literally that would be chicken putting a bit of Caesar solad sauce putting some lettuce leaves and maybe bit cheese and wrap that up in a whole meal wrap that would keep very well you could do it the night before you could have fruit salad you could

Chop it all up and put it in a little container include a little spoon or fork and then you can have you know um maybe a glass of or you know like a bottle with milk or something like that and again you see that it’s separated with stus to indicate they are different

Courses and you most include a drink that’s where a lot of people fall down because you know if you’re not drinking when you’re eating it you could choken it but also you know your drink is hydrating you to prevent you from becoming dehydrated so it’s a simple one

But many people forget to also include the drink so this is from the 2022 exam paper so this is question 12 part of the long question um it’s important to read the whole thing and then what I would say is highlight the key pieces of information so we have column is a

Physically Active Junior cycle student he follows a healthy balanced diet and drinks two lers of water every day design a healthy balanced three course breakfast menu for column to eat at the weekend so in this case the SEC counted orange juice as a full meal okay and so

That would be a tick there um I also see that there are stars indicating that there are three different courses which is taking the box there and it says a healthy balance of three course breakfast healthy for the orange juice because it contains vitamin C and so

Then he’s getting you know one of his um bits of fruit for the day next we have overnight oats with super milk and frozen berries with glass of super milk so you see how you know detailed it is if I just said oats with berries or I

Just said oats you’re not getting full marks unfortunately so overnight oats you know tells me that you know he because he’s a Physically Active student you know he might have a lot of time to make it in the morning so he’s making it the night before okay so that’s you know

Want it not possibly so you’re thinking of in the in the stage or the sequence in which you will be eating so sequence there is actually quite important okay and then you will get full marks for that so this one here is the part two of

This question so you’ll see it says a there part one was the breakfast menu a part two describe three meal planning guidelines you followed when planning columns breakfast menu so you are going to highlight the key part so Describe meaning there’s going to be a long question it’s going

To require a good bit of detail meal planning guidelines so this is the 10 areas which we looked up at the top of this um PowerPoint and you’re relating it back to columns breakfast menu so it has to be about this breakfast menu if you start talking about some other food

That’s not written down there you’re getting zero marks unfortunately it’s not relating to you it’s relating to him a Physically Active Junior cycle students he’s might be 15 16 okay so that’s who you’re thinking of so these are just some samples ones this would have been marked at three points at four

Three out of four Foods including from the fruit FEG section um milk from the dairy section bread from the bread and pasta section so you need that detail you can’t just say I’ve included from the fruit bed section and not say like we know that you’re talking about

Whatever fruit is there but it needs to actually be written down okay um all the foods are quick to make and include a variety of colors so the overnight oats don’t quick to make for him the night before um variety of color so it’s really you know colorful which means

It’s going to be more exciting and you know you’re more likely to eat it there’s lots of different textures okay and which makes it more more interesting breakfast which means you know you’re going to enjoy it more so these would be your full Mark questions based on the

Questions part one and there we’re going to look at the meal planning part two and we’re going to look at some Associated exam questions um it’s pretty repetitive um but you know it’s important to look at them because it is something that I will tell my students they really need

To revise for this year’s Junior cycle exam so meal planning two our learning intentions include knowing what a main meal is defining an appetizer or stter listing suitable stes defining dips giving examples of dips explaining what a stock is discussing suit making guidelines distinguishing between a GU

Varish an an accompaniment so this would also be important for your cooking exam um give examples of balance main courses list examples of desserts list examples of healthy and unhealthy snacks explain the purpose of costing know how to cost a dish outline the role of technology in food

Planning so they be learning intentions that you need to know for this section so main meals what this means is that you’re having a starer and a main course and a dessert okay so if you’re going out to a cafe or a restaurant a main meal is a

Starer a main course and a dessert it’s not just the main course by itself so that would be something You’ need to know starches or appetizers you can keep this as fancy as you want or simple as you want so this is the first course of

A meal okay they help to get the appetites started by stimulating your digestive juices so you’re relating this chapter now back to the digestive system and the term or refers to small piece of food sered cold as a starter it’s a French um term um and there’s you know there’s

Loads of examples there but it doesn’t always have to be a cold thing okay it can be you know warmer slightly warm it’s you know totally up to you you’re relating back to again the meal planning guidelines it’s to who it’s for that you’re thinking about so Foods or dishes

Mayonnaise your suitable foods for dipping include crackers carrots or C celery sticks you know you get your carrot batons and you stick it into homus pieces of bag or you could have like you know tortilla chips uh digging into guacamole like there’s loads of different dips and in Ireland we like

Our garlic Mayo so you’ll be dipping in your chips that are maybe air fried so there’s less oil in them you be dipping them into your H garlic Mayo your soup this may be used as a stasher soup is very commonly used in the Jor cycle cooking exams and um it’s quite

Nutritious is there’s a variety of vegetables in it and it shows a lot of skills now soup you can have it as a hot soup or a cold soup so your hot soup maybe tomato and basil or vegetable soup cold soups are usually found in the Mediterranean such as Spain and that’d

Be like your gazacho so it’s kind of like a cold tomato soup um so stock there’s a picture there of stock so it’s a liquid that me your Fishbones and or veg have been simmered for two to three hours we think stock we think of stock Cube unfortunately those

Um little square stock cubes are absolutely packed with sodiums salt which is bad for you it you know causes hypertension and you can get reduced salt stock cubes now it is a new thing you can get the nor ones which are like little pods and they will be better as

Well for you than the cheap ones so stock improves flavor and the color of soups and sauce adding stock makes everything just T so much nicer and stock granules you can have cubes and gels maybe used to produce an instant stock even gravy do you know

Your gravy granules okay um so the gels would be nicer than the Cubes but homemade stock is always best so guidelines for making soup so these are some tips if you’re making it for your cooking exam these be super important you’re just literally thinking about what you would do if you’re making

Soup so fresh ingredients are best you can use Frozen as well there’s no problem with that but you don’t want to mold the carrot in it using a heavy sauce span with a tight lid meaning or the reason being when you’re saucing the onions in the oil if if the saucepan is

Too thin it’s going to burn it quicker you want a tight lid so that when you’re um simmering away it’s able to reach the temperature uh desired um use a good stock homemade is always best because there’s no added preservative such as sodium and there is a huge uh difference in taste

Ingredients may be saut to improve flavor so this is when you get your oil you add in a little bit of oil and your onion and you keep um stirring it under a low heat usually about um you know Hub number three um and you keep stirring it

And the onion will go from white to kind of like a gold and yellow color and it just improves the flavor so much that would be a tip for a cooking exam as well Blended thickeners well to avoid lumps so if you are adding in say um

Flour to you know thicken up your soup don’t pour this flour into the soup you get a little bowl you mix a little bit of the soup the hot with the uh the cold flour mix it create paast add it in slowly and then blend it up and it will

Thicken up because the starch grains you know will absorb the Heat and they will swell and thicken and you know um absorb up a good bit of the liquid but if you add too much you will it will taste like FL and bring to the boil and simmer

Gently always add hot to cold when mixing liquid so that was so I saying they’re about thickening it up so they’re just guidelines for making soup there’s also many many more so convenient soup so these are ones that are already prepared they’re your canned soup your dried soup your

Instant soup and your chilled soup chilled soup wouldn’t be too bad okay now it does last a lot longer than your normal soup so there is additives in there um instant dried and canned wouldn’t be the best for you to be high in uh preservatives and additives like

Sodium could be MSG so your monos sodium glue uate um in general you have to add some kind of liquid to your dried an instant so they wouldn’t be the best if your caned soup has a dent in it don’t um drink it because there’s a risk of

Cluster Uline them okay and you U botulism is very um very very nasty disease so you’re linking them again back to your food safety and hygiene which can be found on the exam Vision website so garnishes and accompaniments you will need to know the difference between this for your uh culinary skills

Exam okay so a garnish is for example small amounts of foods which are used for decoration they make soup look more attractive okay so if you add a swirl of cream or chopped parsley or chives now for a cooking exam you can’t just rip it apart you have to

Actually you know chop it with an actual knife or crout on so that’s where you get bread um you chop it up into little squares you drizzle it with olive oil salt pepper and stick it in the oven onto grilled for maybe 5 minutes and it just you know really adds that little

Bit of finesse to it an accompaniment is when foods that you can eat with your soup so for example bread rolls whole meal or white bread so main course so this should be a balanced meal so for example you’re having chicken curry and basmachi rice you’re having spaghetti balones lasagna

Vegetarian stir fried with noodles chicken con Carney with boiled rice okay now this list is not finite you can add you know there’s loads more huge M this L is basically endless okay desserts sweet dish served at the end of a meal so for example apple and blackberry

Crumble Pavlova fresh fruit salad apple tarish and ice cream snacks and this come up um as part of the 2023 exam and where the task um one is to prepare a snack so this would be important to take note of so these are small items of food

Eaten between meals try to avoid snacks high in sugar salt and fat healthy snacks include nuts and seeds fruit cheese cereal bars vegetable sticks rice cakes um also like you know energy balls um unhealthy snacks crisps chocolates salted nuts fizzy drinks cream cake biscuits top of the food pyramid

Stuff costing so this means how to calculate how much a dish or meal costs to make costing helps make you save money you need to know the individual cost of the ingredients okay so an example of costing save a recipe uses 500 Ms of yogurt to make a cake you go

To uh the shop or maybe you go to tesco.com you find out how much the yogurt cost per ler to say if it’s 89 then you get your or 89 cent or 98 Cent um so save is 98 Cent for your liter of yogurt you divide that and you

Get your 49 cent so that’s 49 cent for 500 M so now you know that and it’s going to cost you 49 cent and to make this C all right and so your answer then is 49 cent show costings just as a science and a math teacher would tell

You you need to write down the costings in case you make a mistake guidelines for costing list ingredients in correct amounts okay calculate the cost of each ingredient including salt allow extra for fuel cost so electricity gas transport fa flavoring such as salt and pepper herbs raising agents maybe GRE

Grouped together so technology and food planning this came up as part of this year’s Junior cycle homech um exam paper so many websites and apps can help with food planning so info on healthy eating and nutrition uh meal planning special diet recipes and how to cook skills okay

So this part of the 2022 it was part of a long question so it says here D part I sayate two ways the family could use their internet when planning family meals so stuff like finding recipes you like going on BBC good food watching video tutorials whether that’s on

Instagram or Tik Tok or YouTube and whether you’re looking at on the TV whether you’re using the Tesco um online to you know get your food delivered to your house whether you’re looking up online food suitable for a Celiac all that type of thing will um will you know

Count in general most people did really well in this question it was worth six marks so two points at three marks each here’s 2020 SEC sample paper paper again quite similar to the 2022 paper except for in this case it wasn’t a young um male um during his Junior cycle

It is a healthy balance two course dinner meal for a family with a young child now the young child would be very important to take into consideration you can see there a two course so I’ve included aara to differentiate between the two courses so I would suggest

Vegetable soup with a glass of water vegetable soup you’re meeting a load of different um requirements there from your food permit lots of okay you’re also getting water there in in the ACT veg soup and in drinking water you’re getting hidden vegetable spaghetti bnes with super milked drinks

So you could have you know bits of corett carrots loads of little things diced up and so that the child is getting loads and loads of egge um in you know one sitting um super milk is you know high in calcium vitamin D for strong bones and

Teeth again uh this is part two of it so you can see how it it always starts off with a menu and then it asks you to discuss the meal planning guidelines they always relate back to the question so say for example this one nutritious how nutritious and balances the meal

Ensuring you’re meeting the food pyramid guidelines for each family member so because this one is for a family and a young child you’re not just thinking of mom and dad you’re thinking of the young kid as well number of people so in this case we think we have about three people

Um time so how long do you have to cook and how long will take to prepare and cook especially needs to be convenient with a family with loads of kids likes and dislikes so don’t just what a parent would eat you know it needs to be something that suits both variety see
