* 3 chicken breast cut into strips
* 5 tbsps mayo
* Squirt of mustard + favorite hot sauce (about tbsp each)
* Seasonings: garlic powder, onion powder, smoked paprika, black pepper, cayenne, salt & pepper, lemon pepper, and dried parsley
* Half a bag of crushed pork rinds – roughly 3oz
* 1/4 cup grated parmesan
**Directions**
1. Mix mayo, mustard, and hot sauce together in a large bowl. Add 1/2 tsp of garlic powder & pinch of s+p to mayo mixture. Place chicken into bowl and mix together. Let marinate for an hour, up to 12 hours.
2. Mix together seasonings of your choice, crushed pork rinds, and grated parmesan together. Taste and adjust seasoning to your liking.
3. Firmly press chicken into pork rinds. Flipping chicken back n forth until fully coated with pork rind mixture.
4. Place breaded chicken on parchment lined baking sheet. Repeat with the remaining strips.
5. Bake at 400F for 15-25 mins, until chicken is cooked through. No need to flip.
