This Mediterranean orange salad with fennel is such a vibrant salad that will make any table look fantastic. We love to serve this salad with roasted chicken or lamb and rice.

Usually I put this salad together more by eyeballing ingredients rather than measuring them. That is why I’m not adding this recipe to the blog since there I tend to have more precise recipes.

As an estimate I used these ingredients and measurements for this salad:
Serves 4
– 1 Fennel
– 3 oranges, 1 cara cara and 2 blood oranges
– 2 cups of spring mix
– 2 to 3 tablespoons of sliced red onion (hard to estimate this one)
– about 15 kalamata olives
– salt to taste
– about 3 tablespoons of olive oil
– about 1.5 tablespoons of champagne vinegar ( I used this brand but you can pick your favorite, see my affiliate link: https://amzn.to/47Nwtzl).

Mediterranean you love adding orange salads especially winter time and uh serve them alongside like some heavy dishes because it seems the Citrus and the acidity from the orange cuts through the grease and it’s a perfect side dish for those types of dishes plus um if you’re doing the Mediterranean diet and

Orange salad is perfect for that as well so usually I start with one fennel um and I cut just the bulp of the fennel and I slice it very very very thinly then I start peeling the oranges for this salad I used uh one caracara orange and two blood oranges you can adjust

Based on the size of the oranges they are sometimes on the smaller side if you’re using Naval oranges they will be on the bigger side just uh peel them and remove the the white pth because that can be a little bit bitter and just slice the oranges very thinly as well so

Um usually the base of the salad is um green greens you can use spring mix you can use arugula you can use spinach uh so any greens that you like the flavor of you can use for this salad then you start adding the layers I like to alternate if I’m using oranges of

Different colors I like to alternate them to just make the salad Pop um but you can add the layers whichever way you like then I add the fennel and I like to add sliced red onions on this salad but uh usually I put the SLI sliced red

Onions in cold water for about 5 to 10 minutes before I make the salad by adding them in cold water you kind of remove um their their taste a little bit and kind of like the smell so they don’t make you cry when you’re making the salad but also they taste better after

They’ve been in water for a little bit of time then I like to add camata olives to the salad you can add green olives um you can switch it up and then um I add some salt good quality olive oil that’s very important in U Mediterranean salads

And um then I add some champagne vinegar you can use your type of whatever your favorite type of vinegar is but I feel the champagne vinegar matches the Elegance of this dish and um the salad is ready you can uh toast it up or you

Can try to serve it um and then mix the flavors in your plate as the side dish because you want to keep the the beauty of this plate uh that’s why I like to drizzle all over all the pieces so to make sure that they’re coated in both

Olive oil and vinegar and this is a perfect side dish for anything you’re serving for dinner and it will brighten your table everyone will like it kids love it adults love it we love the salad in my household and I hope you enjoy it as well thank you for watching my video
