The Best Chicken Marsala | another classic Italian recipe that’s easy to make right at home.

🐓Chicken🐓
2lbs chicken breast, cut into thirds
Salt & Pepper
Flour as needed
1 large Rosemary sprig
2 tbsp butter

🍷Marsala Sauce🍷
1 pound baby bella mushrooms, diced or sliced
1 large shallot, finely diced
3 large garlic cloves, grated or minced
3 cups really good Marsala wine, imported from Italy
1 cup chicken broth, plus more as needed
2 tbsp cold butter
Salt & Pepper, to taste
Parsley for garnish

METHOD -:

1) Thinly slice your chicken and liberally season with salt and pepper. Then coat your chicken in the flour, shaking an excess flour off.

2) Heat a large skillet over medium-high heat, once hot, lower the head to medium and add avocado oil and the butter. Working in batches add the rosemary followed by the chicken. Cook for 3-4 minutes per side, flip, and cook for another 2-3 minutes. Then set aside.

3) In the same pan, add the mushrooms along with a tablespoon of butter and a drizzle of olive oil. Cook until browned and slightly caramelized. Then add the shallots, garlic, and season with salt.

4) Once fragrant, carefully add the Marsala wine. Simmer until the wine reduces. Add the chicken back to the pan along with the broth. Simmer until the sauce begins to thicken.

5) Once thickened, remove from the heat and stir in the cold butter. Taste, adjusted salt and pepper as needed, then garnish with parsley.
