Welcome back to another episode of restaurant remake i am mark and i am actually going to do a series of the roof chris restaurant so i am preparing you a lobster mac and cheese if this is your first time watching our show i recommend you to try to watch the

Whole thing and this is where i am attempting to recreate dishes from restaurant that i had in the past so today we’re doing the lobster mac and cheese from roof chris and like i said i will be doing a series talking about roof crisp dishes so another

Video that you will see that i have made the creamy spinach and the other dish that i have the star of the main course i will be using a special technique how they boil using the oven to do the steak as well so please check out my video

Mac and cheese i have my carvi tapa pasta and i need a box here i have one quart of whole milk and then i have the and i have 12 ounce of the java’s bird cheese and then i have eight ounces of the sharp cheddar white cheddar followed by i have here

A cup of the white bread crumbs plain bread crumbs here Okay so i have one lobster here which i am going to take out the meat and the lobster weights about a pound to a pound and a quarter okay so then we have one cup uh one stick of unsalted butter here we have half a cup of the flour here all purpose flour And then we have half a tablespoon of the black pepper half a tablespoon of nutmeg that we’re gonna use and these are the ingredients that we need to do our Lobster mac and cheese and these are the ingredients that we need to make our lobster mac and cheese so let’s get started with actually boil the water uh and put some olive oil in and salt water is ready for our pasta we’re gonna put in our pasta right in here

I’m gonna cook it for approximately seven minutes okay i don’t want it to fully cook because we are going to bake it in the often eventually so six to seven minutes is good uh the box says eight minutes is al dente so we are going to now cook it for

Seven minutes or six minutes or so okay so as we cook the pasta we want to stir it a little bit so then it won’t stick together okay so the pasta is ready we’re gonna move it over okay so i have the cold water running right here so we’re gonna put the pasta In okay so we want to stop the pasta from cooking so we want to rinse it with cold water remember we do need to bake the lobster mac and cheese so we don’t want to overcook the pasta right now Okay i want to make sure i get all the water out okay we can leave that in here for a second okay so now i am going to take out all the meats from the lobster now so let’s do it okay so let’s get the meat out from the lobster

We can use a scissor to cut it once we use the scissors to cut out the shell from the lobster tail we can now actually uh break the shell apart and take out the lobster tail once we remove the meat we can actually now kind of put pull those meats apart

So the lobster meets a part and we can shred those into pieces and then with a hammer of the tenderizer hammer we can actually crack the rest of the shell especially the claws area and be sure try to get out as much meat as possible

You don’t want to have any waste in this Case Okay so in a small saucepan you want to heat up your milk so that’s one quart of milk here while we’re cooking the milk we are now actually going to in another bowl we’re gonna put in the six tablespoon of butter All right let’s melt the butter completely first here Okay once the butter is completely completely melted we’re gonna put in our flour okay so let’s add in flour so this is half a cup of flour all right let’s give this a good stir so that we can cook the flour first okay so since we heat up the milk we’re

Actually now gonna pour the milk in Okay so let’s give that a stir so this is to thicken up the milk here okay so we don’t want to bring the milk to boil here so we want to keep stirring and we just want to thicken up the milk here with the flour and let’s cook it for two minutes

Until it’s smooth and thick so right now it’s still Too liquidy so we want to keep cooking it and while you cook you want to keep stirring okay i can see that it’s starting to thicken and you can see there’s bubble around your pot with the mixture here so this is definitely getting thick that’s good just want to make sure it’s

Smooth okay so this is a good thick mixture here keep stirring i want to make sure it’s evenly cooked so with this being smooth and thick now now i can add in the cheese let’s turn off the heat so i add it in the jars for

Cheese and then i’m gonna add in the swiss cheese or actually i’m gonna add in so i’m gonna the second cheese that i add in is the sharp cheddar okay i’m going to add in my pepper half a teaspoon of pepper and half a teaspoon of nutmeg stir this in

Okay now i can stir in my pasta Finally i’m going to add in my lobsters okay so another pan we are going to put two tablespoon of butter in and let’s melt that down and then with my one cup of bread crumbs i’m gonna put this in So now we’re going to transfer the pasta into the baking dish and top it with the bread crumb we are now going to bake it for 30 minutes 350 degrees let’s see how the lobster mac and cheese turn out look at how creamy it is and definitely very hot and the top
