This Kale and Persimmon salad with walnuts and cranberry has a European touch, both from the ingredients and the flavours in the dressing. Persimmon is one of my favourite fruits, they smell like apricots and flows, taste like honey and pears and give you brain – healthy nutrients like fisetin, beta- carotene and loads of minerals. Kale is also super nutritious but I use it as a filler and dilute the strong taste with plenty of citrus juice or vinegar. Best of all, this salad has almost the full palette of colours – greens, reds and oranges, so it not only tastes good but also looks awesome on your dining table. Both kale and persimmon, aren’t native to India but come to us from temperate climates. Naturally, the season to get them fresh is short and you’ll find the last of these in the markets now. So go out and make this now.

Ingredients:
3 1/2 cups kale; washed n finely chopped
1/4 cup extra virgin olive oil
2 tbsp lemon juice
1 1/2 tsp honey
1 tsp mustard
1/4 + 1/8 tsp pepper
salt to taste
1 persimmon; peeled n sliced small
1/2 cup pomegranate arils
1/3 cup walnuts; toasted n chopped
1/3 cup cranberry
1/2 cup feta; cubed
