Ingredients
Oxtails
4 Guajillo deseeded and washed
2 ancho Chiles deseeded and washed
3 Arbol chilies deseeded and washed
1 chipotle in adobe sauce 2 if you would like it more spicy
1 onion diced
2-3 celery stalks diced
1 bell pepper diced
4 garlic cloves minced
2 bay leaves
3-4 cups beef broth
1 tsp of cumin
1tbs of Worcestershire sauce 
Oil 1-2 tablespoons
Carrots
Cooked pasta I used orecchiette if you can’t find those shells will work.
Season to taste

Directions
Season oxtails and brown on each side and remove. Add onions celery and bell peppers cook 5 minutes add garlic and bay leaves cook for one additional minute. Add back in the oxtails,Worcestershire sauce, cumin, and beef broth just up to the meat add in the chili peppers be sure chilli peppers are submerged in broth let cook 20-25 be sure chilies are submerged in the broth after 20-25 minutes remove chilies place in blender along with 1 chipotle pepper (2 if you would like it a bit more spicy) blend until smooth add back to pot and mix cook until oxtails are tender 3-4 hours depending on the size of oxtails (stir throughout the cooking process) last 25 minutes of cooking add in the carrots. taste and adjust seasoning as needed. I Garnished mine with lime cilantro and radish greens
cook Pasta separately adding half water and a ladle of the oxtail cooking liquid. Thank you for watching 🥰

Get into it take Off as for my ingredients I’ll be using some oxtails beef broth got to have my onion celery and bell peppers garlic two bay leaves Chipotle and adobo some Wier sheer sauce I’ll also be using some oric K pasta I’ll be adding in some sliced carrots and my peppers I have some wos

That I deeded and washed off and some ancho peppers I washed those off and de seed also also oral chili pepper and of course you know I’ll show you how to put it all together and let’s get into it first thing we need to do is season up

Our oxtails and I’ll be using some of my allpurpose no salt seasoning use your favorite All Purpose season to your taste be going in with some tonies some beef bullan then you want to go ahead and give this a good mix make sure everything is nice and seasoned on each

Side once you have your meat nice and seasoned we’re going to Brown it off going to add a touch of oil be sure that you’re not over crawling your pot cuz it’ll start to steam in that brown so you want to get these Brown on each

Side now once the oxtails are nice and brown you can go ahead and remove it now we’re going to sauté up our onion celery and bell peppers going to add a touat Tony and we’re just going to get these nice and soft make sure you’re strping the bottom to help release that

Deliciousness we’re going to let these sauté up for about 5 minutes next you want to go ahead and add in your garlic and your two bay leaves going to let this mix in for 1 minute back in your oxtails about a tablespoon of Wier show

Sauce and go ahead and add in the dry peppers and your beef Bra you want to make sure you have enough broth to cover the ox tails and make sure your peppers are submerged in the broth this up with a touch of now we’re going to place a lid on this we’re going to let this come up to a bow

For about 20 25 minutes and I’ll come back and show youall the next step and after about 20 minutes or so just want to take your chilies we’re going to blend those up make sure you don’t grab a oxtail we want all of them and remember I have a full list of

The ingredients down in the description box and now I’m adding in t Chipotles and adobo you can use just one depending on how spicy you like it and some of the broth from the oxtails and you just want to blend it till it’s nice and

Smooth now you just want to add this to your oxtails give it a mix make sure everything is mixed in nicely now all that’s left to do let these oxtails get nice and tender you just want to place your lid back on and put this on the simmer now as your

Oxtails are cooking come in and periodically give these a stir how good this looks oxtails still have a long way to go so I’ll be back to show y’all the oxtails it’s been about 1 hour y’all coming in and give it us a check give everything a mix it’s looking good

They’re not quite tender yet so we’re just going to continue to let these simmer your house is smelling amazing right now yes all right y’all it’s been about 3 hours oxtail has been Simmon away coming in giving it a check it’s nice and tender so now we can go ahead and add in

Our carrots I’ll make a plate out of anything y’all come in and give this a mix you can use those baby carrots also whatever kind of carrots you have on hand and just want to let these carrots get tender now once you have your carrots in you can go ahead and start

Your pasta and what I like to do is add a ladle full to my pasta water add in that pasta and give it a mix and just follow the package instructions on the pasta I chose this kind because of it shape it’ll hold some of the broth

And also because it’s cute but if you can’t find the kind that I use use maybe some shells or whatever else you have on hand and again just follow the package instructions on how to cook it now once the carrots are done go ahead and taste this and adjust your flavors as needed

Remove the bay leaf and look at that y’all and our pasta is ready I like to cook the pasta on the side that way it won’t absorb so much of the broth and I just add the pasta to my bowl and then put the oxtail soup on top and if you

Taste this and if it’s not spicy enough for it you can always use some of the odobo sauce and add it to it and adjust the flavor look at that y’all oxtails nice and tender and here it is y’all I have a nice and plate I garnished it off

With some radish and I used the radish leaves you can use partile of cilantro if you don’t too much care for the radish and see how that pasta just holds some of the broth that’s what you want oxtails nice and tender the soup is nice and flavorful I hope you guys give this
