Basically just like any other scotch eggs, but instead of bread crumbs I rolled them in powdered Parmesan before frying. They came out great!

Adding instructions here to stay compliant and not get my post removed as per sub rules.
Ingredients: Eggs, breakfast sausage, powdered Parmesan cheese, cooking oil of your choice. Amounts vary as per individual taste and demand.
1. Par-boil the eggs. Place the eggs in cold water and bring to a boil. Cook 4 minutes for jammy centers, and 7 for well-done centers.
2. Cool in an ice bath, then peel.
3. Wrap the eggs. Flatten the sausage into an oval shape on a parchment paper square. Use the parchment to wrap the sausage around the egg, then peel back the parchment to release.
4. “Bread” and fry. Roll the balls in powdered Parmesan. Fry in hot oil until deep golden-brown.
