– Hey guys! It’s Suzy with themediterraneandish.com. I’m super excited to show you one of my go to chicken recipes. Now, every cook has one or two chicken recipes that they go to all the time, and mine is Garlic Dijon Chicken. It is super quick, it’s one that I make when

I just simply don’t want to cook. It’s super simple, so let’s get to it. I have some chicken thighs sitting here, I’ve already put some salt and pepper all over them and let them sit to rest. Right, so I’m going to go ahead and make the sauce right in my big bowl here.

We’re going to start with some Dijon mustard, then we have a little bit of honey, about two teaspoons or so, now the honey here is not really to sweeten the chicken, but just to balance that zing from that mustard. Some great extra virgin olive oil.

About a third a cup of that, I might go a little bit more. The flavor makers, tons of garlic. A few spices, I’m going to do some Spanish paprika, which will give it some great color and lots of good depth. And then some salt and pepper.

But if you want to add just a tiny bit of spice, you can add some cayenne pepper or some hot chili pepper. Here’s the sauce really, that’s all there is to it. All we need to do is just place our chicken in this paste, or this sauce that we just made.

Tons of flavor going on right here, I can even smell it, and it’s not even cooked. So that’s how you know it’s good. So you gotta coat your chicken real well here, and that’s really all there is to spicing and flavoring the chicken.

And all we have to do is just kinda, nicely arrange our chicken into my pan. All right, so maybe I’ll add a little bit of onion to my chicken, ’cause I’m fancy like that (chuckles). Just some big chunks of onion. So here’s my chicken, I’m gonna grab my onions,

Gonna add them all around. They’ll impart some flavor as they caramelize in that oven as they cook together. So that’s all there is to it, I’m gonna take it to my oven. Ta-da! (giggling) Here it is you guys, it’s so simple. Absolutely delicious, it smells amazing in my kitchen.

  4. I was looking for a recipe that would be in the same ballpark at the chicken dijon dish which has been on the menu at Julio's in Omaha, Nebraska for a long time. We have been ordering and eating it for twenty years or more. This skillet chicken recipe comes quite close on its own, but by adding a little white wine, it comes even closer. SO good. Thanks for posting this on your blog and for doing the video. It's both quick and easy as well as delicious.
