Satisfying Caramelized Tomato Basil Soup recipe 🤤

It’s that cozy, love me type of weather and there is nothing better then hot soup. Now this isn’t your ordinary Tomato soup and I promise you, it’s the best you’ve ever had. It’s vegan, gluten free, soy free, and outright delicious. I’ve gotten the request to make this recipe for over a year now so I know you’re going to enjoy it.

Recipe
2 pints of Sweet Tomatoes
10 cloves of garlic
6 -8 mini sweet bell peppers
2 tbsp of olive oil
1-2 tbsp of my Just Magic Seasoning ( you can purchase the bundle www.chefjoyasnest.com use code YT15

Add all items to a sheet pan and roast for 15 mins.

Meanwhile, add one cup of vegan butter to a heavy bottom pot. Add 2 sliced sweet onions and 1/2 cup of Brown Sugar. Add 1tbsp of Just Magic and simmer for 15 mins.
Add roasted veggies to the pot with 2 tbsp of balsamic vinegar, 1tbsp of tomato paste, 1 can of unsweetened coconut milk, 3/4 cup of vegetable stock, 1tbsp of vegetable bouillon, 1/2 cup of sherry(optional) 1tsp of black pepper. Bring to a low boil and use an immersion blender to blend until smooth. You can also do this in a blender but please be careful. Add fresh basil and simmer for another 10 mins.

Garnish with some more basil
Serve with a Grill Cheez sandwich or croutons and enjoy!
