    3 tbsp olive oil

    1 pound of chicken thighs cut into bite-sized pieces

    1 pound andouille sausage, thinly sliced into rounds

    3 small bell peppers, cored and diced (I used a yellow, red and green bell pepper)

    2 ribs celery, diced

    1 jalapeño pepper, diced

    1 white onion, diced

    4 cloves garlic, peeled and minced

    1 (14-ounce) can crushed tomatoes

    1/3 cup chicken broth

    1 bag of cauliflower rice

    2 tablespoons Cajun seasoning or Creole seasoning

    1 teaspoon dried thyme, crushed

    1/4 teaspoon cayenne pepper

    1 bay leaf

    2 tsp salt

    1/2 tsp black pepper

    1 pound raw large shrimp, peeled and deveined

    1 cup thinly-sliced okra

    Sauté the chicken and sausage with 1 tbsp olive oil

    In a separate large pot, add 2tbsp olive oil and sauté the onions, garlic, jalapeño, bell peppers and celery until soft.

    Add the crushed tomatoes, seasonings, chicken stock, okra and cauliflower rice.

    Once the chicken and sausage are browned, add them to the pot. Simmer until it has thickened and most of the liquid has evaporated. Remove from heat, stir in the shrimp.

    Green onions are a good garnish. Enjoy!
