    Why always watery? Have you tried less liquid?

    Why not roast the beets, reduce water content?

    Looks awesome. Love the idea of mini hasselbacks. The sauce color combo is working well on the plate too. I would love to see some micro herbs tucked in among the veggie clusters — I think it would soften the composition and really elevate the elegance.
