Hey guys it’s Jeff from pressure luck and today I am real excited to give you one of the easiest quickest and most Gourmet tasting meals ever but takes very few ingredients to do I’m doing something because I’m obsessed with chicken marsala I’m doing something in that level I’ve done a regular chicken

Marsala I’ve done a chicken marsala pasta that’s really creamy and delicious and today we are doing one of the things that the instant poth does best chicken Marcel Roto or Roto I want to roll the r there Roto this is going to be one of the easiest quickest things you’re ever

Going to make and risoto is not known for being that way in the traditional stove top sense in fact it’s so easy it is ridiculous so if you’re really into chicken and mushrooms let’s take a trip shall we over to the instant pot where you’re going to make one of the best

Creamiest and fantastic risotto you’ve ever known let’s do it now the first first thing I want to do is I want to add in 4 tablespoons or a half a stick of salted butter to my instant pot now I’ll come down to my control panel and

Hit the sauté button and make sure I’m on the more or high setting once the Butter’s melted and bubbling we need to add a key ingredient to a marcala and that’s going to be some mushrooms I’m going to add a pound or 16 oz of sliced baby bella mushrooms you

Can use white ones as well but I prefer to use baby Bella as well as two large shallots that diced up and we’re going to sauté our mushrooms and shallots in the butter until they Brown the mushrooms and they begin to release juices now as soon as you add mushrooms

To any type of fat meat butter or oil they like to absorb them like a sponge right away but then they kind of give everything back pretty quickly cuz they then begin to sweat and then release delicious juices along with that so we want to do this for about 5 minutes and

You see after about 5 minutes of Sal my mushrooms and shallots the mushrooms really do release a lot of juices as they Brown and then any brown bits that are stuck in the bottom of the pot you can then deglaze or scrape up with the spatula or mixing spoon thanks to the

Juices they release they going to help everything get right up all right after 5 minutes we are looking wonderful here of course it wouldn’t be chicken marsala risoto without the mushrooms and some chicken I’m using between 1 and 1/2 to 2 lbs of boneless skinless thighs but you

Can also use breasts that are boneless and skin or tender loins and just cut them into bite-sized pieces also try to trim off any excess fat you might find as well as six cloves or 2 tablespoons of crushed or minced garlic and we’re going to sauté all that in the pot until

The chicken becomes pinkish white in color it shouldn’t be fully cooked by now that’ll happen when we pressure cook do this for about another 2 to 3 minutes all right and after about 2 to 3 minutes of sautéing our chicken it’s pinkish white again it shouldn’t be fully cooked

By now at all we want to add in 2 cups of arboro rice now you need arboreo rice to make risotto it has to be that specific kind you can’t use a Jasmine or a Basmati or a long grain it needs to be ar Boro add that to the pot now unlike

Other Rices you don’t rinse AR Boro rice before adding it to the pot then we’re going to just stir the rice in with everything just really mix it all up nice and combined now of course it wouldn’t be chicken marala risoto without well some marala wine and you

Can use either sweet s dry or marcala cooking wine is even fine for this if the critics want to come out and say don’t use cooking wine marcala cooking wine I feel like is fine if you see white cooking wine or red cooking wine don’t use those use like a cheap bottle

Of a dry red or white instead but for marcala you’re okay with the cooking wine same with Sherry uh but if you want to go a little fancy and get a sweet or dry marcala that’s fine sweet will make it a slightly sweeter situation and dry

Slightly dryer one cup of it and now I want to add in four cups of a broth of your choice I’m using mushroom broth because why not mushroom broth but you could use chicken broth garlic broth vegetable broth whatever you want and by the way if you don’t want to use any

Wine even though it is a more Sala just use an extra cup of broth so you’d use five cups of broth all right now give everything a good stir in the pot make sure the bottom is free and clear of anything that might have been stuck onto

It any rice got stuck on there and if you have any rice on the sides of the pot get them into the broth all right a final stir again make sure the bottom of the pot is free and clear this will ensure we don’t get a burn notice when

We pressure cook speaking of which it’s time to get this under pressure we’re going to put our lid on top of the pot secure it make sure it’s in the ceiling position now I’ll come back to my control panel and then hit the cancel button followed by the pressure cook a

Manual button and I want to go for 6 minutes at high pressure I adjust using the plus or minus buttons or using a knob if your model has that and if your model has a start button you hit that and if you doesn’t have a start button

It’ll go into the function after a few seconds of not doing anything anything and now that we’re done pressure cooking we’re going to finish it off with a quick release and the pin just dropped meaning all the pressure has been released from the pot and that’s unlocked now you can

Take the lid off safely and there is some beautiful looking risoto okay once we stir this up it’s really going to get creamy and look perfect but a few funnel touches I want to add in one cup of grated Parmesan or you can use peino Romano cheese peino

Romano some Machi from maau parmesan a little bit nuttier and pearo Romano’s a bit saltier as well as 1 teaspoon of garlic salt and then we’re going to stir that all up and okay do you see the creamy situation going on here the creamy dreamy situation going on here

Perfect risoto cooked with no babysitting laughably easy anybody can do this looking so nice just let this rest in the pot for about 2 to 3 minutes and it’s going to come together even more and then we’re going to serve it up and by the way the dairy in this dish is

Totally optional if you don’t want to use the butter in the beginning you can simply use a/4 of a cup of extra virgin olive oil and at the end you can totally just skip the parmesan cheese you also don’t even have to add in that garlic

Salt if you don’t want you can taste it and see if you want to add it it’s up to you I think it’s the perfect touch but your risotto your rules but I think it is perfect as is and now this is all ready to be served up look at this just

Look at that we got the chicken we got the mushrooms we got the marala wine coarsing through this creamy risotto and that perfectly cooked AR boreo rice which transforms into a risoto right let’s serve it up and try it out and there is my beautiful perfect chicken

It to be perfect in the instant pot you just dump it while you play the trumpet it’s that simple it’s ridiculous and it does everything for you and it comes out in the most amazing creamy situation of course it has to do a little bit with my measurements and making sure that it
