These Maple Roasted Carrots topped with Goat Cheese and Spiced Pepitas are incredibly easy and delicious. The carrots are tender, slightly sweet and addicting!

I like to use whole thin carrots. Keep a bit of the stems intact (just because it looks nice!) and drizzle with melted coconut oil, maple syrup, ground coriander, cinnamon and salt. Roast in a hot oven until caramelized and tender. Then make spiced pepitas with the same spices on the carrots, just roast the seeds for about 8 minutes.

This is a great make-ahead recipe as the roasted carrots taste delicious warm or room temperature, and they hold well in an airtight container for up to 3-4 days. Keep this recipe on hand for the holidays!
