Taco Pasta:

Ingredients:
Beef, 1 red pepper, taco seasoning, tortilla chips (optinal), 1 cup salsa, 1/8 cup greek yogurt (or sour cream as a substitute if you don’t like greek yogurt), mozzarella & cheddar cheese.

Boil pasta 8-10 minutes. Cook beef, add chopped red pepper. Cook for a few minutes. Sprinkle over taco seasoning. Let’s cook and add 2 tbsp of pasta water. Let it simmer. Mixed all cooked pasta (drained), salsa, yogurt, and cheese. Crush tortilla chips over portion. Enjoy!

Cream Cheese Enchilada:

Ingredients:
Enchilada sauce, tortilla wraps, 8 oz cream cheese, 1/2 cup sour cream, corn (optional), cooked rotisserie chicken, 1/2 cup chopped white onions and 4 oz can of chillies (optional).

Pour some enchilada sauce on the bottom of a 9×13 pan. Mix the chicken, cream cheese (room temperature), sour cream, corn, onion, & chillies together in a bowl. Place a couple of good spoonfuls of mixture on a tortilla and roll it up. Place all tortillas in the pan and pour the rest of the sauce on top. Sprinkle cheese over top. Place in the oven (covered) at °350 for 20 minutes till cheese is melted. I had to remove the cover for the cheese in the middle to melt for five more extra minutes.

Hey guys are you ready to do some cooking in the kitchen because I have two meals to show you and uh tonight is meal number one um Taco SL taco pasta um tacos for the boys and taco pasta for us and I’m sure Casey will also have

Some taco pasta but I know Henry won’t but Henry will definitely have tacos cuz he loves tacos who doesn’t love tacos uh but I thought for us I would switch it up and do a taco pasta so my pasta is cooking right now I have the shell pasta

You could use any pasta you want that’s what I had in my cupboards and so that’s what we’re going to use um so let’s get cooking all right so we have beef in this pan this will be for regular tacos and then the beef in this pan will be

For the taco pasta and the pasta is right here I had the wrong burner on though of course I’m going to get the pasta going and then I will start cooking the beef while we wait for the pasta to boil which takes like forever like honestly 72 hours later um

Both recipes will be in the description box below hello from Henry so one of the ingredients in the recipe is red pepper one red pepper and if you remember in the summertime I had a bunch of bags I don’t know I had like four or five bags of

Small red peppers and I canned two jars so we’re going to use one and we’re going to see this also this will also be good for chicken pasas and we’re going to see how well these turned out my fingers are crossed and my toes all right so the top popped off

There was a nice sound smell good look good this was like my first time canning so that’s why it’s like I’m very curious let’s uh take a little testy poo very good all right I’m impressed very good there’s a a crunch to them yeah I wasn’t sure if there

Would be a crunch or not but there is yeah okay I’m going to get some of these out for the pasta um the taco meat is already already done and pasta is done I drained it the pasta has to be um La Dante and we will continue on that looks

About right and I’m going to make some chicken fajitas mhm coming up and the future soon to be meal mhm all right let’s uh continue taco meat is all done I added the seasoning we are good to go pasta is done and our meat for the taco pasta is also

Done and to the beef we’re going to add the peppers I just cut them really quick now if you’re using a regular red pepper just uh let it sauté and and cook for a couple of minutes that looks like the right amount all right perfect and then we’ll add the taco

Seasoning but I’m just going to let that you know get to know I’m going to let them get to know each other yeah they can mingle the beef and the pepper and before you before you get rid of your pasta water Reserve 2 tablespoons of the water right taco seasoning

And then the two tablespoons of water pasta water and then we let that cook just for about a minute and then we mix everything else and we’re good to go yummy yummy so we also need sour cream well half a cup well it says 18 cup but I don’t have a 1/8 cup

I’m going to add one one a half a cup and a cup of salsa we have to open it though Perfect Look at that that’s a trick give it a good smack smack on the bottom uh it says about a cup this is probably close to a cup and of course the

Cheese and you can also add when you serve it on top um crunched up tortillas I didn’t get the tortillas but that’s optional okay let’s toss in the Pasta okay and we’ll mix that looking good sour cream it looks good oh does that ever look good oh my goodness oh sign me up yeah this is probably a little bit over a cup but I’m going to use all of it cuz what’s the point of leaving some behind nobody gets left

Behind that’s right oh that looks so good okay I’m going to mix this really good and then I’m going to add a couple handfuls of cheese and we’re good to go that looks so good yummy winter meal Comfort meal you can’t go wrong especially when there’s cheese involved right darn

Toting it’s nice to have something different okay I’m just going to let the cheese melt and we will plate some up but that’s what’s for supper tonight guys and I hope that you make this and you make it for supper and this will be once’s for supper in your

Title we’re making chicken and enchiladas I haven’t made this recipe for a very long time so I think it’s long overdue um a couple weeks ago I bought whole chickens that were on sale at no FRS and I bought two uh one to put in the freezer um so that’s what I did

With this one um I just have to chop it up a little bit and I’ll put it back in the bowl that’s all I got to do to it cuz I just pretty much when I did cook it I just like took chunks off of it and put

It in a in a Ziploc bag and tossed it in the freezer yeah yeah cutting it up can you know come when you’re ready to do your recipe yeah so only thing I had to buy was um cream cheese which is at room temperature um sour

Cream and Anil sauce and of course your tortillas yeah my oven is already to go at 350 and oh and cheese also now I use mozzarella cheese because Casey doesn’t like any other cheese so I just use mozzarella that way he can have some and it’s cheese I don’t care cheddar

Mozzarella I really am not picky when it comes to cheese so yeah as long as it’s not stinky cheese yeah we’re all good yeah all right so let me finish cutting this chicken up and um we will get to uh the rest of the recipe and of course if you have a chicken

St and it was um me and the hubby and Casey who ate it Henry doesn’t like that kind of stuff so he likes tacos regular tacos but not taco pasta but it was really really good and really just better like 10 times better like the flavors are so good the

Back all right there we go you get your arm workoutat in uh I’m going to add some corn frozen corn to it um I think in the recipe they add chilies and I’m like you know what corn sounds like a better idea yeah cuz we don’t like anything

Spicy chilies would definitely make it a little bit more spicy perfect that’s the thing with the enchiladas you can add anything to it yeah make it your own you go exactly by the recipe if you want or go Offroad you know what it’s F to go Offroad once in a while and add

Your own things in just don’t pick up any H Checkers if you go Offroad okay all right so I have my big casserole dish um now we put some of the enula sauce on the bottom just enough to cover it and then the r we pour on top well that’s

Good going to pour in a little bit more there we go and then we get our enchiladas I madean Aras and they fill them up with that goodness couple spoonfuls that’s good I need more room actually I’m going to grab a cut board that’s better cut board I had to put the the

Dish on the microwave not microwave toaster oven whatever that thing is called not Appliance yeah Whatchamacallit all right and then you just roll it up tuck it in now there’s 10 in here I don’t think I’ll be using all 10 I think I usually get around five maybe six we shall see

And then it goes in the oven for 30 minutes not 30 20 minutes at 350 yeah also peppers would be good in here like a my bell pepper that would be good too yeah I must be [Laughter] hungry and know there’s any leftovers we’ll have them tomorrow night hopefully there

There is now I usually we have one um I think this is all we’re going to have I don’t have any salad left um but we took care of that with the taco pasta um but if I was having something else with it like a salad I would

Probably have like half of one but since this is the one only thing where having I would probably eat a whole one let’s see one two three grab a few more so I hope everyone is doing well keeping busy oh our Runa will be starting up pretty soon yeah our cont

Tractor um had a frozen pipe and you know what happens if you have a frozen pipe right yeah it burst on him so he’s been dealing with that so that’s why we have been on stand standby and like that’s fine that is a big emergency so he’ll get that sorted out

And he’ll be right over here to finish up cuz we are really close to the end and believe me I’m just getting tired of living out of laundry baskets like looking for your underwear and bra and yeah your outfit or your pajamas it’s just I’m I’m over it yep I am so over

Leftovers yeah I think I usually do and we all love love love leftovers because we don’t have to cook the microwave does the cooking that’s right all right there we go oh ring light cord is in the way but yeah there we go looking good okay I’m going to toss her

  4. Definitely coking the taco spaghetti!! Enchilads look good but not sure if I'd like the red sauce,never had it,but need to try! I always order it with white cheece sauce..must step out of comfort zone. Bet Mexican corn would be good in those enchiladas too & black beans too,yep,I'm gonna try this too😁
